Egg White Cake with Turkish Delight
To prepare a delicious and fluffy cake, we start by ensuring that all the ingredients are at room temperature, which will help achieve a homogeneous texture. The first step is to beat the egg whites until foamy. This process is essential, as well-beaten egg whites will provide considerable volume to the final mixture, helping the cake to be light and airy. Add a pinch of salt to stabilize the foam, then use an electric mixer on high speed until the egg whites become firm and glossy.
In another bowl, take the soft margarine and cream it with granulated sugar and vanilla sugar. Mixing these ingredients should be done patiently, to obtain a smooth and fluffy cream. Then, extinguish the baking powder in a little vinegar, add it to the margarine and sugar mixture, along with the vanilla essence, which will add a pleasant aroma. Once you have a uniform paste, start gradually incorporating the flour, mixing gently to avoid lumps.
Once you have a homogeneous mixture, gradually add the beaten egg whites, mixing with a silicone spatula or a wooden spoon, using up-and-down motions. It is important to be gentle so that you do not lose the air in the egg whites. You will notice that small lumps may appear at first, but they will diminish as you continue to mix.
Separate a quarter of the obtained mixture and mix it with cocoa to create a rich chocolate paste. Now it’s time to prepare the pan; grease it well with margarine and sprinkle a little flour to prevent the cake from sticking to the bottom. Start by pouring the white mixture into the pan, leveling it with a spatula. Then, using a spoon, add the cocoa mixture in the middle of the white mixture, using a swirling motion to create an ornamental effect.
To add extra flavor, cut the Turkish delight into small cubes and evenly distribute it over the two mixtures. This will add an interesting texture and a sweet aroma to your cake. You can also use the mosaic decoration to create an attractive look, leaving a little space between the cubes of Turkish delight to form a beautiful design.
Once you have finished arranging everything, place the pan in a preheated oven at 180 degrees Celsius. Let the cake bake for about 40 minutes, or until it is golden brown and a tester inserted in the middle comes out clean.
