Tiramisu cake is a classic Italian dessert, known for its delicious combination of coffee, mascarpone, and a fine sponge base. Its fascinating history takes us back in time, where it is believed to have been created in the 20th century, quickly becoming a favorite among dessert lovers worldwide. This recipe blends tradition with a modern approach, offering an airy texture and enriched flavor. Let's embark on the journey of preparing this refined cake together!
Ingredients
For the sponge:
- 8 egg whites
- 3 egg yolks
- 8 tablespoons sugar
- 8 tablespoons water
- 10 tablespoons flour
- 1 teaspoon baking powder
- 50 ml brewed coffee
For the cream:
- 5 egg yolks
- 5 tablespoons sugar
- 250 g mascarpone
- 300 ml whipped cream (we recommend Meggle for a perfect texture)
For the syrup:
- 200 ml brewed coffee, weaker
For decoration:
- cocoa
- powdered sugar
- coffee beans
Step 1: Preparing the sponge
1. Beating the egg whites: In a large bowl, add the egg whites and water. Using a mixer, beat on high speed until you achieve a stiff foam. This is a crucial step, as well-beaten egg whites will provide a light and airy texture to your cake.
2. Adding the yolks: Lower the mixer speed and add the 3 egg yolks, continuing to beat to incorporate them into the mixture.
3. Incorporating the dry ingredients: In another bowl, combine the flour with the baking powder. Sifting these will prevent lumps from forming. Add the flour mixture to the egg composition, alternating with the brewed coffee, gently folding with a spatula to maintain aeration.
4. Baking the sponge: Preheat the oven to 180°C. Pour the mixture into a 28 cm round cake pan lined with baking paper. Bake for about 25 minutes or until a toothpick inserted in the center comes out clean. Let it cool completely before removing from the pan.
Step 2: Preparing the cream
1. Thickening the yolks: In a heat-resistant container, add the 5 egg yolks and sugar. Place it over heat, in a bain-marie, and stir constantly until the mixture becomes creamy and doubles in volume. This step will ensure a rich and velvety cream.
2. Incorporating the mascarpone: Let the mixture cool slightly, then add the mascarpone. Mix well with a spatula or a mixer on low speed to obtain a smooth composition.
3. Whipping the cream: In another bowl, whip the cream until it becomes firm. This step will add an airy texture to the cream.
4. Combining the ingredients: Add the whipped cream to the egg yolk and mascarpone mixture, gently folding to avoid losing air from the composition.
Step 3: Assembling the cake
1. Preparing the syrup: In a bowl, dilute the weaker brewed coffee prepared earlier. This syrup will give an intense yet delicate flavor to the sponge layers.
2. Soaking the sponges: Cut the cooled sponge into 3 equal parts. Using a pastry brush, soak each layer with the coffee syrup, ensuring it is well absorbed.
3. Assembling the cake: On the first sponge layer, spread a portion of the cream, then place the second sponge layer. Repeat the process with the remaining cream and sponge. Cover the cake with the remaining cream, smoothing the surface with a spatula.
4. Decorating: Dust cocoa over the top of the cake using a sieve for an even layer. Decorate with powdered sugar and coffee beans for an elegant look.
Step 4: Chilling and serving
Let the cake chill in the refrigerator for at least 2 hours to allow the flavors to meld and the cream to set. This dessert is perfect for special occasions or simply to indulge at the end of a day.
Practical tips for a perfect result
- Use freshly brewed coffee for an intense flavor.
