The Little Red Riding Hood Cake is a delicious and elegant dessert, perfect for any special occasion or to indulge yourself on quiet evenings at home. With a combination of fine cream cheese, juicy cherries, and a layer of flavored gelatin, this cake will surely impress anyone who tastes it. Preparation time is about 30 minutes, and baking time is 25 minutes, totaling 55 minutes to achieve 12 servings of goodness.
Ingredients for the cake base:
- 200 g plain biscuits (preferably digestive biscuits)
- 100 g melted butter
Ingredients for the cream cheese:
- 400 g cottage cheese (or mascarpone for a creamier taste)
- 150 g powdered sugar
- 1 packet of vanilla sugar
- 200 ml whipping cream
- 10 g powdered gelatin
Ingredients for the cherry filling:
- 300 g fresh cherries or from a jar (if using jarred cherries, drain well)
- 50 g sugar
- 1 packet of gelatin (10 g)
For the flavored gelatin:
- 200 ml cherry juice (or your favorite fruit juice)
- 10 g powdered gelatin
Preparation of the cake base:
1. Start by preparing the cake base. Crush the biscuits in a food processor or place them in a bag and crush them with a rolling pin until they become a fine powder.
2. Melt the butter in a small saucepan and, after it cools slightly, mix it with the crushed biscuits until you obtain a homogeneous mixture.
3. Spread the biscuit mixture in a square baking dish (approximately 20x20 cm) lined with parchment paper, pressing well to form an even layer. Place in the refrigerator to harden while you prepare the cream cheese.
Preparation of the cream cheese:
4. In a large bowl, mix the cottage cheese with the powdered sugar and vanilla sugar until you obtain a smooth and homogeneous cream.
5. In another bowl, whip the cream until it becomes firm and gradually add it to the cheese mixture, mixing with a spatula to avoid losing air.
6. Hydrate the gelatin in 50 ml of cold water for 5 minutes, then gently heat it in a double boiler or microwave until completely melted. Add the melted gelatin to the cream cheese and mix well.
Preparation of the cherry filling:
7. In a saucepan, place the cherries with the sugar and let them simmer over low heat for 5-7 minutes until they soften slightly.
8. Hydrate the gelatin for the cherries as in the previous step and mix it with the warm cherries, stirring quickly to dissolve completely.
Assembling the cake:
9. Remove the base from the refrigerator and pour the cream cheese over it, leveling it evenly. Let it cool in the refrigerator for 30 minutes.
10. Add the cherry filling on top, distributing it evenly. Place it back in the refrigerator for at least 30 minutes to set.
Preparation of the flavored gelatin:
11. Prepare the flavored gelatin by mixing the cherry juice with the hydrated and melted gelatin, then pour it over the cherry filling. Leave the cake in the refrigerator for another 2-3 hours or until it sets completely.
Serving:
12. When the cake is well set, remove it from the pan and cut it into generous portions. You can decorate with a few fresh cherries or mint leaves for an elegant look.

Preparation: Mix the whole eggs with sugar, honey, and cherry liqueur, add milk, oil, and flour mixed with baking powder. Mix gently. The fluid dough obtained is baked in a preheated oven at 175 degrees, in a baking tray lined with parchment paper, for ten minutes, after which sprinkle the 2 tablespoons of cherries on top and continue baking for another 15 minutes. The baked sheet is left to cool in the tray, and when completely cold, the paper is removed and placed on a platter, drizzling it with some more cherry liqueur and juice from the cherry compote. For the cream - boil the vanilla pudding powder in 400 ml of milk, together with flour and sugar, and in the hot pudding mix in all the cheese until a creamy mixture is obtained. Whip the cream and add the stabilizer. Whip until very firm. In the already cooled pudding and cheese mixture, add the whipped cream, mixing gently. On the sheet, add all the remaining cherries. On top of them, add the cream evenly over the entire surface, smoothing gently with a long-bladed knife, moistened. Prepare the cake jelly according to the instructions on the package, using the necessary amount of liquid - juice from the compote mixed with cherry liqueur. Cover the cake with the jelly, refrigerate for 2 hours, then cut with a knife moistened in cold water. The Red Riding Hood Cake recipe was proposed by lauralaurentiu.
