This salami pizza recipe with a special dough enriched with blonde beer is perfect for weekend evenings or a gathering with friends. Let’s embark on our culinary journey!
Preparation time: 25 minutes
Rising time: 30 minutes
Baking time: 12-15 minutes
Total time: 1 hour
Number of servings: 4-6 servings
Ingredients
For the dough:
- 500 g flour (preferably type 000 for a finer dough)
- 25 g fresh yeast
- 1 teaspoon honey or sugar (to activate the yeast)
- 250 ml warm water (about 37°C)
- 1 teaspoon salt
- 50 ml blonde beer (for a special elasticity)
For topping:
- 150 g grated Emmental cheese (with a distinct flavor)
- 150 g mozzarella (for creaminess)
- 1 tablespoon tomato sauce (or more, to taste)
- 100 g ham (half a slice, thinly sliced)
- 100 g fresh mushrooms (sliced)
- 100 g salami (thinly sliced)
- 1 chili pepper (sliced)
- Dried herbs (a mix that can include oregano, basil, and dried garlic)
Preparation
1. Preparing the dough:
In a large bowl, dissolve the yeast in warm water. Add the honey or sugar and let the mixture sit for 5-10 minutes until it becomes frothy. This step is essential to activate the yeast, which will make the dough rise beautifully.
2. Mixing the ingredients:
In the bowl with the activated yeast, add the flour and salt. Use a spatula or your hands to combine the ingredients. Finally, add the blonde beer. This will add a soft and elastic texture to the dough.
3. Kneading:
Transfer the dough to a well-oiled or floured work surface. Knead the dough for about 10 minutes until it becomes smooth and elastic. If the dough is sticky, you can add a little flour, but don’t overdo it to avoid making it too dry.
4. Rising:
Place the dough in an oiled bowl and cover it with a damp towel. Let it rise for 30 minutes in a warm place. This step will help the dough rise and become fluffy. As an extra trick, you can keep the dough in the fridge for another 30 minutes after rising for an even better texture.
5. Rolling out the dough:
Once the dough has risen, divide it into two or three parts, depending on the desired pizza size. Use a rolling pin to roll out the dough into a thin sheet, about 5 mm thick. Make sure to use enough flour on the work surface to prevent sticking.
6. Preparing the pizza:
Preheat the oven to 210°C. Place the pizza sheet on a baking tray lined with parchment paper. Start by spreading a thin layer of tomato sauce on the dough, leaving a 1 cm edge on the outside. Add the Emmental and mozzarella cheese, followed by the sliced ham and salami. Evenly distribute the mushrooms and chili pepper slices. Sprinkle dried herbs on top for added flavor.
7. Baking:
Place the pizza in the preheated oven in the middle and bake for 12-15 minutes. If you want a crispier crust, you can increase the temperature by a few degrees, but be careful with the baking time.
8. Serving:
Once the pizza is ready, take it out of the oven and let it rest for a few minutes before slicing. This will help the cheese to set. You can also add some fresh basil leaves on top for an extra touch of freshness and an attractive appearance.
Useful tips
- Ingredient substitutions: If you don’t have Emmental cheese, you can use any other type of cheese with a pleasant flavor, such as Cheddar or Gouda.
- Variations: You can add other ingredients like olives, bell peppers, or pineapple to create a personalized pizza. Be creative!
- Recommended drinks: A salami pizza pairs perfectly with a cold beer or a light red wine. Also, a tomato juice with basil can be a refreshing choice.
Nutritional benefits
Pizza is a versatile dish that can include healthy ingredients. Whole wheat flour can be a better choice for the dough, providing fiber and nutrients. Mushrooms are also a good source of antioxidants, and chili peppers can boost metabolism.

Ingredients: We need pizza dough made from: 500 grams of flour, 25 grams of yeast, a teaspoon of honey/sugar, approximately 250 ml of water, salt. For topping the pizza, I used grated Emmental (it has a unique flavor, I would say) and mozzarella, a tablespoon of tomato sauce, half a slice of ham, a few fresh mushrooms, a few thinly sliced salami, a few rings of chili pepper, dried herbs, I have a mix that also contains dried garlic which gives a special taste to the pizza.
