Step-by-step preparation:

1. Preparing the ingredients: Start by slicing the chicken breast into strips about 1 cm thick. This will allow the meat to cook evenly and quickly. Place the chicken strips in a large bowl and add the potato starch. Add 1-2 tablespoons of water and mix well until the meat is evenly coated with a light sauce. This will help achieve a tender and juicy texture.

2. Chopping the vegetables: Peel the ginger and slice it thinly. Crush the garlic cloves with the blade of a knife, leaving them whole to add flavor. The carrots should be cut into sticks 5 cm long and 2-3 mm thick. Clean the leek and cut it into pieces 5 cm long, then cut each piece in half or into quarters, depending on thickness.

3. Rehydrating the mushrooms: Place the black mushrooms in a bowl with boiling water, making sure to cover them completely (about three times their volume). Let them soak for 10 minutes, then drain and slice them thinly. These mushrooms will add a unique texture to the dish.

4. Cooking: Heat the oil in a large pan or wok over medium heat. Add the ginger and garlic, allowing them to sauté until the garlic becomes translucent (about 1-2 minutes). Add the chicken strips and fry for 5 minutes, stirring constantly.

5. Adding the vegetables: After 5 minutes, add the carrots and pour about 1/5 of a bottle of soy sauce. Cook the mixture for another 7 minutes, or until the chicken is fully cooked and tender.
