To start, choose a piece of pork with an even thickness so that it cooks evenly. Clean the meat well, removing any membranes or excess fat. Then, using a sharp knife, open the meat like a book to obtain a larger sheet. This process is essential to allow the filling to integrate perfectly into the final roll.

The filling can be made from a combination of ingredients. For example, you can sauté vegetables such as onion, carrot, and bell pepper, to which you add fresh herbs like parsley or thyme. An even richer option is to add feta or mozzarella cheese for a creamy and savory taste. You can also opt for a mixture of minced meat, seasoned with garlic, salt, and pepper.

Once the filling is ready, spread it evenly over the surface of the opened meat. Carefully roll the meat, starting from one end and making sure to keep the filling inside. Pork roulades are elegant and very tasty culinary preparations. The slices of meat are beaten, salted, and peppered on both sides. On the inside, the slice of meat is spread with a thin layer of mustard. Over the mustard, slices of bacon are placed. The carrots are peeled and cut into sticks, and they are placed over the bacon. A leaf of parsley and one of sage are added, then it is rolled and closed with a needle for the roulade (a toothpick can also be used). The roulades are browned in a pan with a little sesame oil.
