Ingredients for the dough:
- 250 g butter (soft)
- 100 g powdered sugar
- 1 egg
- 350 g flour
- 1 pinch of salt
Ingredients for the filling:
- 500 ml milk
- 100 g sugar
- 40 g starch
- 2 eggs
- 1 vanilla essence
- Fresh fruits (berries, kiwi, peaches, or anything else you prefer)
Preparing the dough:
1. Start by preparing the dough. In a large bowl, add the soft butter, powdered sugar, and egg. Mix them with a spatula or with a mixer on low speed until you obtain a homogeneous mixture.
2. Add the flour and a pinch of salt. Mix gently until the ingredients combine. Don’t worry if the dough seems sticky at first; it's normal.
3. Form a ball from the dough, wrap it in plastic wrap, and place it in the fridge for about 3 hours. This step is essential to achieve a tender and easy-to-shape dough.
Preparing the pudding:
1. In a saucepan, add the milk and sugar, then place it on low heat. Stir constantly to dissolve the sugar.
2. In a separate bowl, beat the eggs with the starch and vanilla essence. When the milk is almost boiling, pour the egg mixture over it, stirring quickly. Continue to cook on low heat, stirring constantly, until the pudding thickens.
3. Once the pudding is ready, let it cool slightly, then cover it with plastic wrap to prevent a crust from forming.
Assembling the mini tarts:
1. Preheat the oven to 180°C. Remove the dough from the fridge and divide it into small pieces, about a tablespoon each.
2. Roll each piece of dough into a disc and place it in the tart molds, pressing firmly against the sides. Prick the base with a fork to prevent it from puffing up during baking.
3. Bake the mini tarts for 20 minutes or until they turn golden. Allow them to cool completely before filling.
Finishing and serving:
1. Once the tarts have cooled, fill each tart with the prepared pudding and decorate with fresh seasonal fruits.
2. For an extra touch of flavor, you can drizzle some caramel or chocolate sauce on top.
Possible variations:
- Replace the vanilla pudding with chocolate pudding for a more decadent version.
- Use canned or dried fruits for a winter variation.
These mini pudding and fruit tarts are not only a quick dessert but also an excellent way to impress guests at a special event. Enjoy every bite and savor the delicious combination of textures and flavors!
