The dough for éclairs is an essential base that, once mastered, can transform a simple recipe into a true delight. The first step in preparing the dough is to boil two cups of water along with a cup of oil and a pinch of salt. It is important to mix the ingredients over medium heat until the mixture reaches a boiling point. When the water and oil start to boil, quickly add two cups of chopped flour, stirring vigorously with a wooden spoon or spatula. It is essential to incorporate the flour very well, so that no lumps remain. After you have obtained a homogeneous dough, set it aside to cool slightly. Once the dough has reached a bearable temperature, add one egg at a time, mixing well after each, until all 10 eggs are fully integrated into the mixture. This process will give the dough a light and airy texture. Use a piping bag to form the éclairs on a baking tray lined with parchment paper, making sure to leave enough space between them, as they will rise considerably in the oven.

For the delicious cream, combine 12 egg yolks with two cups of sugar, mixing them well until you achieve a creamy consistency. Gradually add a little warm milk, whisking continuously. Then, incorporate the 10 tablespoons of flour and the remaining milk, continuing to mix. Place the mixture over medium heat, stirring continuously with a wooden spoon to prevent sticking. The cream is ready when it thickens, and the bottom of the pot becomes visible when you stir. Once it has cooled, add the beaten egg whites with the remaining sugar and vanilla, mixing gently to maintain the airiness.

The glaze is a final step that will add an extra flavor to your éclairs. For this, melt 200 grams of chocolate together with a piece of butter slightly larger than a walnut. Add 8 tablespoons of sugar and 4 tablespoons of water, stirring over low heat. Once the chocolate has melted and the mixture becomes homogeneous, remove from heat and let it cool slightly. Pour the hot glaze over the éclairs placed on a platter, allowing it to settle evenly. The final result will be an absolutely irresistible delicacy that you will surely love! Your éclairs will quickly become the favorites of everyone who tastes them, and you will be proud to have made them with such skill!
