How to Make Sun-Dried Tomatoes

To prepare 1 kg of raw vegan tomato sauce, you will need the following ingredients: 500 g sun-dried tomatoes, 200 ml extra virgin olive oil, 100 g cashews, 3 garlic cloves, 2 tablespoons balsamic vinegar, 1 teaspoon sea salt, 1/2 teaspoon freshly ground black pepper, 1 teaspoon chili flakes (optional), and a few fresh basil leaves for added flavor.

The first step in preparing this sauce is to ensure that the sun-dried tomatoes are well rehydrated. If they are very dry, you can soak them in warm water for about 30 minutes. After they have absorbed enough water, drain them and set aside. Then, in a blender, add the sun-dried tomatoes, cashews (which will provide a creamy texture to the sauce), garlic, olive oil, balsamic vinegar, salt, pepper, and chili flakes if you like a spicier taste.

Blend all the ingredients at medium speed until you achieve a creamy and smooth consistency.
