Bean puree is a simple yet flavorful dish that brings a touch of tradition to your table. This appetizer or side dish is perfect for a family meal or to impress guests. Here’s how you can make a creamy and aromatic bean puree with an unforgettable taste.

Ingredients:

- 500 g white beans
- 2 medium onions
- 200 ml sunflower oil
- 1 head of garlic
- 1 carrot
- Salt to taste

Step 1: Preparing the beans

To make a delicious bean puree, it’s important to start with the beans. Begin by washing 500 g of white beans well under cold running water. Then, soak the beans in cold water for 6-8 hours or overnight. This step not only reduces cooking time but also helps improve digestibility.

Step 2: Boiling the beans

After the beans have soaked, drain and rinse them again. Place the beans in a large pot and add enough water to cover them. Add a teaspoon of salt and bring the water to a boil. Reduce the heat and let the beans simmer for about 20 minutes. Be sure to remove any foam that forms on the surface for a cleaner and tastier dish.

Step 3: Adding the vegetables

After 20 minutes, add two chopped medium onions and a grated or diced carrot to the pot. These vegetables will add extra flavor and sweetness. Continue to simmer everything on low heat for 20 minutes, until the beans are soft and the vegetables are cooked.

Step 4: Preparing the puree

Once the beans and vegetables are cooked, drain them, reserving a few tablespoons of water to adjust the consistency if needed. Add the beans, onion, and carrot to a blender, along with the cleaned and chopped head of garlic. Gradually add 200 ml of sunflower oil, blending until you achieve a smooth and creamy paste. If the puree is too thick, add a tablespoon of the reserved liquid to thin it out until you reach the desired texture.

Step 5: Serving

Bean puree is served warm, but it is also delicious cold as an appetizer. You can choose to garnish it with freshly chopped parsley or a few slices of tomatoes for a more attractive appearance. It’s perfect on a slice of toasted bread or as a side dish for grilled meats and vegetables.

Practical tips:

- If you want a more intense flavor, you can add spices like paprika or cumin during boiling.
- This recipe can be adapted according to your preferences. Instead of carrot, you can add bell pepper or even parsnip for a different taste.
- Bean puree can be stored in the refrigerator for 3-4 days, making it ideal for meal prep.

Enjoy your dish and savor every bite of bean puree! This simple and delicious recipe is sure to become a family favorite.
