Ingredients:
- 200 g digestive biscuits
- 100 g melted butter
- 400 g cottage cheese
- 200 g sour cream
- 150 g sugar
- 3 eggs
- 1 packet of vanilla sugar
- 300 g quinces (peeled and diced)
- 2 tablespoons lemon juice
- 1 teaspoon cinnamon (optional)
Preparation:
1. Start by preparing the tart base. Crush the digestive biscuits in a food processor or by placing them in a food wrap and crushing them with a rolling pin. Mix the crushed biscuits with the melted butter until you achieve a homogeneous mixture.
2. Pour the biscuit mixture into the silicone margarita-shaped mold, pressing well with a spoon to form an even crust. This will create a crunchy and delicious base. Place the mold in the refrigerator for 10 minutes to firm up.
3. Meanwhile, prepare the filling. In a large bowl, combine the cottage cheese, sour cream, sugar, eggs, and vanilla sugar. Mix the ingredients with a mixer on medium speed until you achieve a creamy and homogeneous mixture. You can also add cinnamon for extra flavor.
4. In another bowl, mix the diced quinces with lemon juice to prevent oxidation and keep their vibrant color. Add the quinces to the cheese mixture and gently stir, so as not to crush the fruits.
5. Preheat the oven to 180 degrees Celsius. Once the crust has set, pour the cheese and quince filling into the mold. Smooth the surface with a spatula for an even appearance.
6. Bake the tart in the preheated oven for 25 minutes or until the edges are lightly browned and the center is set. Allow the dessert to cool completely in the mold, then carefully remove it from the silicone mold.

Chill for a bit while preparing the gelatin as per the packet instructions, but using the quince compote juice instead of water. Once the gelatin has cooled and set, add it to our cream and chill again. After 5 minutes, pour this cream into the butter-greased silicone marguerite mold and refrigerate for a longer time, at least an hour. Then, we will invert the cream onto the base, ensuring the marguerite petals are evenly layered, and decorate with strawberry jam.
