Chicken Breast Meatballs with Peas
To prepare a delicious recipe for pea and chicken meatballs, we start by finely chopping a medium onion, which we will sauté in a pan with a little olive oil. It is important not to let the onion burn, but to sauté it until it becomes translucent and releases its flavors. Once the onion is ready, we add fresh or frozen peas, season with salt and freshly ground pepper, and let everything cook over medium heat for about 20 minutes. It is essential to occasionally add warm water to prevent the ingredients from sticking to the pan and to achieve a pleasant consistency.
In the meantime, we prepare the chicken breast, which we will slice thinly. We heat a grill pan, where we will cook the chicken slices for 2 minutes on each side until they become golden and juicy. Once cooked, we let them cool down to make them easier to work with. Once cooled, we place them in a food processor and grind them until we obtain a homogeneous mixture, which will form the base of our meatballs.
We transfer the ground meat to a generous bowl and add finely chopped fresh parsley, grated Parmesan cheese, and a whole egg. We mix the ingredients well to ensure that all the flavors blend perfectly. Then, we take the previously sautéed peas, add them to the bowl, and mix again. It’s time to adjust the taste, so feel free to add more salt and pepper to your liking. With wet hands, we form meatballs of suitable size, which we will first dip in beaten egg and then in breadcrumbs to achieve a crispy crust.
In a deep pan, we put plenty of oil and let it heat well. This is the secret to perfect frying, as the oil must be hot enough to seal the meatballs and give them an appetizing golden color. We fry the meatballs for 3-4 minutes on each side until they become brown and crispy. Once they are ready, we place them on a plate covered with paper towels to absorb the excess oil. Served hot, these meatballs become a savory appetizer or a wonderful main dish, perfect to be accompanied by a fresh salad or a flavorful yogurt sauce. Enjoy your meal!
