Aspic with Vegetables
Ingredients: 200 g frozen green peas, 5-6 fresh mushrooms, 1 red bell pepper and 1 yellow one, 1 can of corn, 1 carrot, 5-6 pieces of soy for schnitzel, 1 tablespoon of vegeta, 2 cloves of garlic, 1 packet of vege-gel.
Peas, carrots, and pieces of soy form the basis of a delicious and healthy recipe that will delight not only vegetarians but also those who appreciate colorful and flavorful dishes. We start by preparing the essential ingredients. First, we peel the carrots and cut them into rounds, ensuring they are of uniform thickness for even cooking. In a deep pot, we add water and a little salt, then introduce the carrots and crushed garlic, allowing them to boil over medium heat. It is important to ensure that the carrots are half-cooked before adding the other ingredients.
After about 10 minutes, we add the frozen peas and the soy pieces cut into strips. The latter will be added to provide texture and a specific taste. We let the mixture boil for 10 minutes, then remove the vegetables from the water and let them cool. It is essential to drain the peas and rinse them under cold running water so that they retain their vibrant color and stop cooking.
In another pot, we wash the mushrooms and boil them for 7-8 minutes in salted water to intensify their flavor. At the same time, we use the pot in which we boiled the peas to blanch the peppers, cut into strips or cubes, for 3-4 minutes. This step will enhance the flavor of the peppers, enriching the final dish.
Once all the ingredients are ready, we prepare to assemble the aspic. We chose a metal ring as a presentation shape, which will give an elegant look to the dish. We start by cutting leaves from the peppers and placing them at the bottom of the ring. Then, on the sides, we arrange the slices of mushrooms, taking care to distribute them evenly for an attractive appearance.
To bind all the ingredients, we use vegetable gel, which we dissolve with water in a bain-marie. We add a splash of vinegar and a little salt to enhance the flavor. Once the gelatin is completely dissolved, we carefully pour it over the vegetables arranged in the ring, ensuring that we cover all the ingredients evenly. We let the dish sit in the fridge for a few minutes to set, thus giving it a beautiful shape and a pleasant texture. Once the aspic has hardened, we can confidently serve it, being sure it will delight everyone's taste buds.
