Fruit birthday cake
For my birthday, I decided to prepare a special cake with a walnut and wine base, combined with a fine vanilla cream and cherry jam. The cake will be decorated with light whipped cream, fresh raspberries, and wafer flowers, creating a true culinary masterpiece.
We start with preparing the base. Separate the eggs, making sure that the egg whites are in a clean bowl, free of any grease. Using a mixer, beat the egg whites with a pinch of salt until we get a firm foam. Gradually add the sugar, continuing to mix until the foam becomes glossy and well-formed. Then, add the 6 egg yolks, gently mixing with a spatula so that the mixture does not deflate.
At this point, add the baking powder dissolved in a cup of white wine, the sifted flour, and the ground walnuts, mixing carefully until homogeneous. Pour the mixture into a round pan lined with baking paper and bake in a preheated oven at 180 degrees Celsius for about 35 minutes. The base is ready when it passes the toothpick test.
For the syrup, combine water with sugar over low heat, stirring until the sugar completely dissolves. If desired, add flavors such as vanilla essence or half a vanilla pod for a more intense taste. After the syrup has cooled, cut the base in half, ensuring that the bottom is thicker than the top, and generously soak it.
The vanilla cream also requires some attention. In a saucepan, heat the milk, and in another pot, mix the egg yolks with sugar, vanilla seeds, and flour. Slowly pour the warm milk over the mixture, then place the pot on the stove, adding the vanilla pod. Boil the mixture, stirring constantly, until the cream thickens. Finally, add the butter and mix until homogeneous, then let the cream cool.
For decoration, whip the liquid cream with a mixer, being careful not to whip it too much so that it remains soft and airy. Fill the cake with the vanilla cream, adding cherry jam here and there, then cover the cake with whipped cream. Finally, decorate with fresh raspberries and wafer flowers, creating an attractive and tasty appearance. Let the cake chill for a few hours to blend the flavors.
