- 2 tablespoons of lemon juice
- zest of one lemon
- 1 tablespoon of rum essence
Instructions:
1. Preparing the yeast: In a bowl, mix 50 ml of warm milk with the yeast, one tablespoon of sugar, and one tablespoon of flour. Mix well and let it rise for about 10 minutes until it becomes frothy.
2. Making the dough: In another large bowl, sift the flour and add the salt. In a separate cup, heat the remaining milk. While waiting, separate the eggs. Beat the yolks with the sugar until they become a light cream. Add the lemon juice and zest, then mix well.
3. Combining the ingredients: Pour the warm milk over the yolk mixture and mix well. Add the yeast mixture to the flour and gradually incorporate the yolk mixture. Finally, add the beaten egg whites and rum essence.
4. Kneading the dough: Melt the butter and add it to the dough. Knead well until the dough no longer sticks to your hands. If necessary, you can add a little flour to help with the consistency. Cover the bowl with a towel and let it rise in a warm place until it doubles in volume (about 1 hour).
5. Shaping the mini loaves: Once the dough has risen, divide it into 2 or 3 pieces. On a surface greased with oil or melted butter, roll out each piece of dough. Add a generous layer of Nutella and roll the dough up.
6. Placing in molds: Place the rolls in larger muffin tins, leaving a little space between them to rise. Let them rise for another 10-15 minutes.
7. Baking: Preheat the oven to 180°C and bake the mini loaves for 45 minutes or until golden.
8. Finishing: After taking them out of the oven, brush them with a beaten egg and sprinkle sugar on top for a glossy and delicious appearance.
