Smoked Meat Soup - A Recipe from the Heart

Smoked meat soup is a dish that evokes pleasant childhood memories, when grandma spoiled us with its unmistakable aroma. This dish is perfect for cold winter days when you can enjoy a steaming bowl full of flavors and warmth. A nourishing soup, rich in natural ingredients, that will not only warm your soul but also bring a delightful taste to your table.

Preparation time: 30 minutes
Cooking time: 1 hour
Total time: 1 hour and 30 minutes
Number of servings: 6

Essential ingredients:

- Beef bones with some meat (about 500 g)
- Smoked meat (ribs and bacon, around 200 g)
- 1 large onion (you can also use white and red onion for a more complex flavor)
- 1 small celery (about 100 g)
- 1 parsnip
- 1 red bell pepper
- 2 medium potatoes
- 1 carrot (preferably grated on the small grater)
- 1 bunch of fresh lovage
- 1 bunch of fresh parsley
- Borscht or vinegar (to taste)
- A few ripe tomatoes (about 200 g)

Step-by-step preparation:

1. Preparing the bones and meat: Start by washing the beef bones well, then place them in a large pot with cold water. Add a little salt and bring to a boil. It is important to skim the soup to remove the impurities that form on the surface. This step is essential for obtaining a clear and tasty soup.

2. Chopping and preparing the vegetables: While the bones are boiling, you can start preparing the vegetables. Chop the onion finely, peel and grate the celery and parsnip (grate the parsnip on the large grater and the celery on the small one). Grate the carrot on the small grater, and cut the potatoes into cubes. Chop the red bell pepper finely.

3. Sautéing the vegetables: In a separate pan, add a little oil and sauté the onion until it becomes translucent. Then add the carrot, celery, parsnip, and bell pepper. Cook the vegetables over medium heat for 5-7 minutes, stirring constantly.

4. Adding the meat and vegetables to the pot: Once the bones have boiled for about 30 minutes, add the sautéed vegetables to the pot. Also, add the smoked meat cut into small pieces. Let everything simmer on low heat for another 15-20 minutes.

5. Finishing the soup: Add the potatoes and crushed tomatoes. Let the soup boil until the potatoes are soft, about 15-20 minutes. Finally, add the chopped lovage and parsley, then sour the soup to taste with borscht or vinegar. I prefer to use vinegar, as it perfectly combines with the smoky flavors.

6. Serving: The soup is served hot, with sour cream, hot peppers, and onion or garlic on the table. A personal touch I add is to include a few slices of fresh hot pepper in the bowl for an extra kick of flavor.

Useful tips:

- Ingredients: Choose fresh and quality ingredients. The beef bones should have some meat, as this will give a richer taste to the soup. The smoked meat can vary depending on preferences, but ribs and bacon provide a wonderful aroma.
- Calories and nutritional benefits: A serving of smoked meat soup contains about 250-300 calories, depending on the amount of meat and sour cream added. It is rich in proteins and vitamins from vegetables, making it a nourishing and comforting dish.
- Variations: You can experiment with different types of meat or add other vegetables, such as zucchini or peas. Also, for a lighter option, you can use chicken meat.

Frequently asked questions:

- Can the soup be frozen? Yes, smoked meat soup can be frozen. You can keep it in airtight containers for maximum freshness.
- Can it be adapted for vegans? Although the original recipe contains meat, you can adapt this soup by using smoked vegetables or vegetable broth and omitting the meat completely.

This smoked meat soup is not just a meal, but an experience that will remind you of the beautiful moments spent with loved ones. Savor every spoonful and enjoy the rich flavors that will warm your heart!
