Preparation:
1. Start by preheating the oven to 180°C. Prepare a round cake pan (about 22 cm) by greasing it with butter and dusting it with flour.
2. In a large bowl, beat the eggs with the sugar until they become fluffy. Add the melted butter and vanilla essence, mixing gently to combine the ingredients.
3. Sift the flour together with the baking powder and salt over the egg mixture. Fold in the flour with a spatula, being careful not to overmix, just until there are no traces of flour.
4. Pour the mixture into the prepared pan and level the surface. Bake the base for 25 minutes or until a toothpick comes out clean. Let it cool completely before removing it from the pan.
5. While the base cools, you can prepare the yogurt cream. In a small bowl, hydrate the gelatin in cold water for 5 minutes, then gently heat it until it completely dissolves (without boiling).
6. In another bowl, whip the cream until it becomes firm. In a large bowl, mix the yogurt with the powdered sugar and dissolved gelatin. Gradually fold in the whipped cream, mixing carefully.
7. Once the base has cooled, cut it into two layers. If desired, you can make a quick syrup by boiling the water with sugar and vanilla essence. Soak each layer of the cake with the syrup to add extra moisture and flavor.
