To prepare a delicious noodle and cheese cake, start by boiling the noodles in a large pot of salted water, following the instructions on the package. Once they are al dente, carefully drain them using a cloth and let them cool completely. While the noodles are cooling, you can start preparing the filling.

In a large bowl, use a mixer to beat the cheese until creamy. Add the egg yolks, melted and cooled butter, vanilla sugar, and grated orange peel. All these ingredients combine harmoniously to create a rich and flavorful filling. It is important to mix well so that all the ingredients are fully integrated.

In another bowl, place the raisins that you have soaked in rum for 30 minutes to give them extra flavor. Add the raisins to the cheese mixture, followed by the sour cream, which will add a special creaminess to the filling.

Now, return to the egg whites. Beat them until stiff peaks form, and when they start to firm up, gradually add the sugar, continuing to beat until you achieve a glossy and firm meringue. This will give the cake an airy texture. After you have finished beating the egg whites, carefully fold them into the cheese mixture. Use a spatula and gently mix with folding motions to avoid deflating the egg whites.

Once you have obtained a homogeneous mixture, add the cooled noodles and mix again gently. Divide the obtained dough into two equal parts and roll each part out on a work surface, forming two sheets the size of the pan in which you will bake the cake.

Preheat the oven to 180 degrees Celsius. Place the first sheet in the baking pan lined with parchment paper and sprinkle a thin layer of semolina to absorb moisture. Evenly add the filling over the entire surface, then cover with the second sheet. Make sure the edges are well sealed to prevent the filling from leaking during baking.

Put the pan in the preheated oven and bake the cake for about 45 minutes or until it turns golden brown and nicely colored. Once the cake is done, let it cool slightly before cutting. Serve it warm or at room temperature, dusted with powdered sugar if desired, and enjoy the combination of textures and flavors it offers!
