Once the sugar has completely dissolved, add the cleaned apricots to the pot and let them boil over medium heat.

It is important to stir occasionally to prevent sticking and to ensure even boiling. The apricots will start to break down and release their natural juice, which will enhance the flavor of the preparation. After about 15-20 minutes, when the apricots are well cooked and become soft, you can move on to the next step.

Using a hand blender or a food mill to puree the fruits, turn the cooked apricots into a fine paste. If you opt for the hand blender, make sure to use it in circular motions to avoid splattering. If you choose the food mill, you will need to apply constant pressure to extract as much pulp as possible.

Once you have obtained a smooth paste, it is essential to pass it through a fine sieve. This will remove any larger pieces of skin or fibers, leaving you with a creamy and velvety consistency.
