To obtain a delicious dough that will bring a touch of magic to every bite, we start by gathering the necessary ingredients. You will need 500 grams of flour, 250 ml of warm water, 50 ml of olive oil, 10 grams of salt, and a pinch of sugar. In a large bowl, combine the flour with the salt and sugar, mixing well to ensure the dry ingredients are uniform. In another container, add the warm water and olive oil, then mix to combine them.

Pour the liquid gradually over the flour mixture and begin kneading with your hands. The dough should become smooth and elastic, similar to play dough, which will ensure a perfect texture. No rising is necessary, making this recipe ideal for moments when you want something quick and tasty. Once you have obtained a homogeneous dough, roll it out on a floured work surface into a thin sheet about 2-3 mm thick.

When you have finished rolling out the dough, use a knife or a cutting wheel to cut the dough into irregular, longer pieces in a rectangular style. These unique shapes will add a rustic look to your dish.

In a deep pan, pour oil to a depth of about 4-5 cm and allow it to heat well. It is important for the oil to be very hot before starting the frying process. Carefully add one piece of dough at a time to the pan, being careful not to overcrowd it. The pieces of dough will puff up as soon as they come into contact with the hot oil, and after a few moments, when they turn golden on one side, flip them using a spatula. Let them fry for a few more seconds on the other side, then remove them with a wire spatula and place them on a tray lined with absorbent paper, which will remove the excess oil.

To keep them warm while frying the rest of the batch, you can place the tray in a preheated but turned-off oven, so they stay at a pleasant temperature. These delicious bites pair perfectly with a selection of cold cuts. I strongly recommend serving them alongside Milano salami, which has an intense flavor and a fine texture, or with prosciutto crudo, which will add a touch of refinement to your dish. Each bite will be an explosion of flavors, and the combination of the crispy dough and juicy cold cuts will turn any meal into a memorable feast. Enjoy them with a cold drink and savor every moment!

Ingredients: recipe for about 12 people 1 kg white flour (a finely ground wheat flour like the one you use for pastries but one used for bread works too) 30 g salt (my mother-in-law changed it to 20 g) 100 g sunflower/corn/soy oil 50 g fresh beer yeast which we dissolve in 1-2 tablespoons of milk about 400 g milk (depends on how moist or dry the flour is, you may need less or more)
