Potato Salad
To prepare a delicious and flavorful potato salad, we start by selecting the potatoes. It is essential that they are of approximately equal size, so they cook evenly. We wash the potatoes well under a stream of cold water, then we place them to boil in their skins, in a large pot with water. Boiling in their skins helps retain the flavor and nutrients, so do not skip this step. We let the potatoes boil for about 20-30 minutes, depending on their size. In the meantime, we prepare the eggs. We place them in another pot with cold water and boil them for 10-12 minutes until they become hard.
While the potatoes and eggs are boiling, we can take care of the other ingredients. We finely chop the cucumber, which will add a crunchy and fresh note to the salad. Then, we slice the onion thinly, being careful not to make it too thick, so it doesn’t overpower the other flavors. Similarly, we take care of the olives, which we slice into rounds or halves, depending on preference. The homemade sausage, an ingredient that will give the salad a special flavor, is cut into small cubes so that it integrates perfectly into the mix.
After the potatoes and eggs have boiled, we drain them and let them cool. Once they have cooled, we peel the potatoes and cut them into cubes or slices, depending on preference. We peel the boiled eggs and cut them into quarters or slices, adding them to the bowl with the potatoes.
Now, all the ingredients are ready to be combined. We put the chopped potatoes, eggs, cucumber, onion, olives, and sausage into a large bowl. We season the salad with salt and pepper to taste, being careful not to overdo it, as the mayonnaise will also add a bit of saltiness. We prepare the mayonnaise, whether we choose the classic version or use store-bought mayonnaise, depending on preference.
Once the mayonnaise is ready, we add it over the salad mixture. Using a spatula or a spoon, we gently mix the ingredients to ensure that everything is well coated with mayonnaise. It is important to mix carefully so as not to crush the potatoes. Once all the ingredients are combined, we can serve the salad immediately or let it chill in the refrigerator for an hour to let the flavors meld together. This potato salad is perfect as a side dish or as a main course, being an ideal choice for festive meals or gatherings with friends. Enjoy!
