- 300 ml whipped cream

Step-by-Step Instructions:

Step 1: Prepare Base 1
1. In a large bowl, beat the egg yolks with the sugar until they become a frothy and light-colored cream.
2. Gradually add the orange juice and continue mixing.
3. Sift the flour together with the baking powder into the mixture and gently fold.
4. In another bowl, beat the egg whites until stiff and carefully fold them into the above mixture using a spatula to retain air.
5. Pour the mixture into a baking tray lined with parchment paper and bake at 180°C for 25-30 minutes, until the base is lightly browned and passes the toothpick test.

Step 2: Prepare Base 2
1. Beat the egg whites with the sugar until stiff peaks form.
2. Add the egg yolks and mix well.
3. Sift the flour, cocoa powder, and baking powder, gently folding from the bottom up.
4. Bake at the same temperature as the previous base for 30 minutes, in the same tray or a similar one.

Step 3: Prepare the Sheet
1. In a bowl, mix all the ingredients for the sheet until you obtain a homogeneous mixture.
2. Pour the mixture onto the back of a baking tray lined with parchment paper and bake for 10-15 minutes at 180°C, until lightly browned.

Step 4: Prepare the Syrups
1. For Syrup 1, boil the water, orange juice, and sugar for 5 minutes. Let it cool.
2. For Syrup 2, combine the water, sugar, and rum essence, letting it boil for a few minutes.

Step 5: Prepare Cream 1
1. In a saucepan, mix the milk with the sugar, vanilla sugar, egg yolks, and flour. Cook over low heat, stirring continuously, until thickened.
2. Once cooled, add the butter and orange juice, mixing well to avoid curdling.

Step 6: Prepare Cream 2
1. Repeat the process as for the previous cream, but add the chopped chocolate and raisins after the cream has thickened. Mix until the chocolate melts.

Step 7: Assemble the Cake
1. Place Base 1 on a platter and soak it with Syrup 1.
2. Spread the chocolate cream over Base 1.
3. Add Base 2, soak it with Syrup 2, and cover it with the orange cream.
4. Place the baked sheet on top and decorate with whipped cream and cocoa.

Step 8: Serving
Serve the cooled cake, cut into generous portions. You can decorate it with orange slices or grated chocolate for a more festive appearance. Don't forget to prepare a cup of tea or coffee to complete the experience!

Practical Tips:
