Who doesn’t remember the jam cookies that grandma used to make? This orange jam cookie recipe is a true treasure, perfect for evoking sweet memories and bringing joy in every bite. Plus, you can substitute the orange jam with other favorite jams, like plum or raspberry, to create delicious variations.
Ingredients:
- 4 tablespoons orange jam (or other preferred jam)
- 125 g butter, at room temperature
- 1 egg
- 2 tablespoons sugar
- 300 g flour
- 1 teaspoon baking powder
- Grated zest of one orange and one lemon
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1 teaspoon rum extract (optional)
Instructions:
1. Preheat the oven: Start by preheating the oven to 180°C. This step is essential for achieving evenly baked cookies.
2. Prepare the dough: In a large bowl, add the orange jam and mix it well with a spatula. This step will not only enhance the flavor of the cookies but also add moisture to the dough.
3. Add wet ingredients: Add the softened butter, sugar, egg, milk, vanilla and rum extracts, as well as the grated orange and lemon zest. Mix well until you achieve a homogeneous mixture.
4. Combine dry ingredients: In another bowl, combine the flour with the baking powder. Then, add the flour mixture to the bowl with the wet ingredients, mixing gently until the dough becomes compact.
5. Knead the dough: Transfer the dough onto a well-floured work surface. Knead it gently to make it uniform. If the dough is too sticky, you can add a little more flour.
6. Rest the dough: Wrap the dough in plastic wrap and let it chill in the refrigerator for 30 minutes. This step will help the cookies maintain their shape during baking.
7. Shape the cookies: Once the dough has chilled, roll it out on a floured work surface to about 5 mm thickness. Use cookie cutters to cut out the cookies and place them on a baking tray lined with parchment paper.
8. Bake: Place the tray in the preheated oven and bake the cookies for 12-15 minutes until they turn slightly golden. You’ll know they’re ready when the edges become crispy, but the center remains soft.
9. Assemble: Let the cookies cool on a rack. Once they are completely cooled, take one cookie and spread it with orange jam, then top it with another cookie, forming a sweet sandwich.
Serving suggestions: These orange jam cookies are perfect to enjoy alongside a cup of tea or coffee. You can decorate them with powdered sugar for an elegant look, ideal for a festive table.
Helpful tips:
- If you want fluffier cookies, you can replace some of the flour with almond flour.
- Experiment with different types of jam to find your favorite combination.
- The cookies can be stored in an airtight container for a few days, but they are so delicious that they won’t last long!
Enjoy every step of the preparation and savor the sweet memories that these cookies bring!
