Gnocchi with Mushrooms
Ingredients: 250 g fresh sliced mushrooms, 2 tablespoons of olive oil, 20 g butter, 20 g butter for serving, 1 medium onion (finely chopped), 2 cloves of garlic (finely chopped), 4 peeled and chopped tomatoes, 3-4 tablespoons of vegetable broth (chicken or water), 400 g gnocchi, 1/2 bunch of parsley, parmesan for serving.
In a large pot, bring water to a boil, adding a teaspoon of salt and a splash of oil to prevent the gnocchi from sticking. When the water starts to boil violently, carefully add the gnocchi, making sure not to overcrowd them. The gnocchi are ready when they rise to the surface, a sign that they have cooked properly. At this point, remove them with a slotted spoon and set them aside, being careful not to drain them completely, to keep a bit of the boiling water.
Meanwhile, take a large pan and bring it to medium heat. Add 2-3 tablespoons of olive oil and 20 grams of butter to the pan. Wait a few moments until it heats up well, then add a finely chopped onion and 2-3 minced garlic cloves. Sauté for 3-4 minutes until the onion becomes translucent and the garlic releases its aroma, being careful not to burn it.
Once the onion and garlic are ready, add sliced mushrooms (about 300 grams) and mix everything to combine. Let the mushrooms fry for another 2-3 minutes until they reduce in volume and become slightly golden. Now, is the perfect time to add the specified liquid in the recipe (it can be vegetable broth or water) and a few diced tomatoes (about 200 grams). Put the lid on the pan and let the mixture simmer on low heat for 8 minutes, allowing the flavors to combine.
After the 8 minutes, lift the lid and check if there is still liquid in the pan. If so, drain it a little and add a handful of finely chopped parsley for an extra touch of freshness. Here, you can adjust the seasonings to taste, adding salt or pepper if necessary.
When the gnocchi are ready, drain them well and place them in a warmed bowl. On top, add another 20 grams of butter and chopped parsley, gently mixing until the butter melts, enveloping the gnocchi in delicious flavors. Finally, place the mushroom mixture on top, gently mixing so as not to destroy the shape of the gnocchi.
For an attractive appearance, sprinkle a bit more parsley on top and add grated Parmesan or thin slices of Parmesan, which will add a savory and creamy note. Serve the dish on warmed plates to keep the heat, and don’t forget to add a garnish of Parmesan slices. Additionally, a glass of good wine alongside will perfectly complete this culinary experience!
