To start the process of preserving red currants, the first essential step is to ensure that the fruits are perfectly clean. Therefore, wash the red currants very well, without stems, in several waters to remove any traces of pesticides or impurities. After washing, let them drain in a sieve or bowl so that the excess water drains completely.

Once the currants are well drained, transfer them to a larger container, of at least 10 liters capacity. This will be where the magic begins. Add boiled and then cooled water, lemon salt, which will help preserve the color and flavor of the fruits, and salicylic acid, which you will dissolve slightly in a little cold water. It is important to use salicylic acid, as it will not affect the taste of the fruits or the syrup, unlike other preservatives.

After adding all the ingredients to the container, homogenize the mixture, gently crushing the currants to release the delicious juice. Cover the container and let it sit for 24 hours, so the flavors can blend and the fruits can release their juice. The next day, add the sugar, stirring gently, and let the mixture rest again for 24 hours. It is crucial to stir from time to time so that the sugar dissolves completely and integrates perfectly into the syrup.

On the third day, it is time to move on to the next step – straining the mixture. Use double cheesecloth to separate the fruits from the syrup, making sure to obtain a clear and aromatic syrup. The drained fruits can be transferred to sterilized jars, where they will be kept for later use. Pour the syrup over them, ensuring they are completely covered. Seal the jars, label them with the date and type of fruit, and then store them in a pantry, in a cool, dark place.

The preserved fruits can be used in various desserts, such as cakes, puddings, tarts, jellies, creams, or even ice creams. They keep very well, even for 2-3 years, allowing you to enjoy the fresh taste of summer even in the coldest winter months. This recipe not only enriches desserts with vibrant flavors but also brings a touch of nostalgia in every jar.
