Eclairs with vanilla cream
To prepare the delicious cream puffs, we will start by taking care of the shells. In a pot, we bring water to a boil, along with oil and salt. It is essential that the water boils well before adding the flour. When the water is boiling, we add the flour all at once, being careful to stir quickly to avoid lumps. We mix vigorously until the mixture pulls away from the sides of the pot and forms a smooth ball. We turn off the heat and let the dough cool slightly so that we can add the eggs without cooking them.
Once cooled, we add the eggs one by one, mixing vigorously after each addition. It is important to ensure that each egg is well incorporated before adding the next. Once we have a smooth and shiny dough, we prepare to form the shells. Using a piping bag, we will pipe the dough onto a baking sheet lined with parchment paper, forming small blobs or eclair shapes, depending on preference. The shells are initially baked at a high temperature to puff up, then we lower the heat to bake them evenly and dry them well inside.
In the meantime, we dedicate ourselves to preparing the cream. In a pot, we bring one liter of milk to a boil, being careful to stir it occasionally to prevent sticking. In a separate bowl, we combine the remaining ingredients: sugar, egg yolks, and optionally, vanilla or other preferred flavors. When the milk starts to boil, we gradually pour it over the egg mixture, stirring continuously to avoid coagulating the eggs. Once the mixture is homogeneous, we put everything back on the heat, simmering on low, stirring constantly until the cream thickens, becoming similar to polenta.
Finally, we beat the egg whites from the 3 eggs with 150 grams of sugar until we achieve a firm meringue. This will be gently folded into the warm cream to give it an airy texture. Now that we have the baked shells and the cream ready, we can start filling them. Using a spatula or spoon, we fill each shell with the delicious cream, being careful not to overfill them.
For an extra flavor boost, we can add a layer of whipped cream on top of the cream, according to our preferences. The tops of the shells can be dipped in melted chocolate, adding a decadent touch and an attractive appearance. These cream puffs with cream and whipped cream are ideal for any occasion, being not only tasty but also very visually appealing. Enjoy them with pleasure!
