- 300 g of fresh (or frozen) spinach
- 100 g of butter
- 200 g of flour
- 3 eggs
- 100 ml of milk
- 10 g of baking powder

Instructions:

1. Preparing the spinach: Start by washing the spinach well under cold running water, then place it in a pot of boiling water. Boil the spinach for 2-3 minutes, then drain it well to remove excess water. It is essential to squeeze it well, as any excess water will affect the texture of the cake. If you are using frozen spinach, make sure you have thawed and drained it well.

2. Making the puree: Place the boiled spinach in a blender or a deep bowl and use an immersion blender to turn it into a fine puree. You can add a little olive oil to enhance its flavor, but this step is optional.

3. Preparing the mixture: In a saucepan, melt the butter over low heat, being careful not to let it burn. Once melted, remove it from the heat and let it cool slightly. In a large bowl, whisk the eggs well with a whisk, then add the spinach puree, milk, and melted butter. Mix well until you obtain a homogeneous mixture.

4. Adding dry ingredients: In another bowl, combine the flour with the baking powder, salt, and pepper. Then, gradually add the wet ingredient mixture to the dry one, mixing with a spatula or whisk until you get a uniform dough. If desired, you can add crumbled feta cheese for extra flavor.

5. Baking the cake: Preheat the oven to 180 degrees Celsius. Grease a loaf pan with a little butter or oil and pour in the prepared dough. Make sure to distribute it evenly in the pan. Bake the cake for 40 minutes or until it turns golden and a toothpick inserted in the middle comes out clean.

6. Cooling and serving: After baking, let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. You can serve it warm or at room temperature, alongside a fresh green salad or with a yogurt and garlic sauce.
