Chicken roll with omelette
To prepare a delicious and hearty meal, we start by making two fluffy omelets that will add extra flavor to our chicken rolls. The first step is to clean the green onion, slicing it into fine rounds so that its aroma disperses evenly in the omelet. In a bowl, we whisk two fresh eggs, adding a pinch of salt and pepper to enhance the taste. Once we have a homogeneous mixture, we incorporate half of the chopped green onion, mixing well.
Now we prepare a small frying pan, greasing it with a splash of oil and heating it over medium heat. When the oil is hot, we pour in the egg mixture and let it brown, aiming to achieve a golden and fluffy omelet. When the bottom is well cooked, we help the omelet flip with a spatula, being careful not to break it. We flip the other side until it becomes lightly browned. We proceed the same way with the second omelet, using the same method. These omelets will form the delicious base of our rolls.
After finishing with the omelets, we turn our attention to the chicken halves. We wash them well under cold running water, then pat them dry with a paper towel to remove excess moisture. Using a meat mallet, we gently pound them to even out their thickness, and then sprinkle salt, pepper, and sweet paprika on all sides of the meat to give it a flavorful taste.
On each piece of chicken, we place one omelet, followed by longer strips of mozzarella that will melt and add a creamy layer. We carefully roll each piece of chicken, tightening it well to keep the filling inside. To ensure they stay securely closed, we fasten the rolls with toothpicks.
In a deep frying pan, I heat the oil over medium heat and add the rolls, sprinkling a little rosemary on top for extra flavor. We brown them evenly on all sides, being careful that the heat is not too high so they cook well inside. While the rolls are cooking, we mix tomato juice with a cup of water and pour it into the pan. We let the sauce simmer over medium heat, stirring occasionally with kitchen tongs to ensure the rolls are evenly coated with sauce.
Once the rolls are cooked and the sauce has reduced, we take them out onto a plate and let them rest for a few minutes. Then, we carefully portion them and serve, admiring the beauty and aroma of this dish. Enjoy your meal!
