- 2 tablespoons ground cinnamon
- 50 g soft butter (at room temperature)
- 3 tablespoons sugar

Instructions

Step 1: Activating the yeast
1. In a small bowl, mix the dry yeast with 1 tablespoon of sugar, 50 ml of warm milk, and a little flour (about 2 tablespoons). Mix well and let it sit in a warm place for 10-15 minutes until it starts to form bubbles on the surface. This is a sign that the yeast is active and ready to work.

Step 2: Preparing the dough
1. In the bread machine bowl (or a large bowl if kneading by hand), add the activated yeast, eggs, the remaining sugar, the melted (but cooled) butter, and the remaining milk.
2. Start adding the flour gradually, mixing with a spatula or your hands until you obtain a uniform dough. If you notice that the dough is too sticky, you can add a little more flour, but be careful not to overdo it, so you don't end up with a dough that is too dense.
3. Add the salt and candied orange peel, continuing to knead the dough until it becomes elastic and smooth (about 10 minutes).

Step 3: Rising the dough
1. Cover the bowl with a clean, damp towel or plastic wrap, allowing the dough to rise in a warm place for 1 hour, or until it doubles in volume.

Step 4: Shaping the rolls
1. Once the dough has risen, turn it out onto a lightly floured surface and roll it into a rectangular sheet about 1 cm thick.
2. Spread the entire surface with the soft butter, then evenly sprinkle the sugar and cinnamon.
3. Fold the edges of the sheet towards the center, bringing them inward and forming a smaller rectangle. Then, fold it again into thirds to create an even smaller rectangle.
4. Roll this rectangle into a sheet about 2 cm thick and roll it tightly along the length.

Step 5: Cutting and shaping the spirals
1. Use a piece of thread to cut the roll into pieces about 3 fingers thick. I advise you to thread the string under the roll, then pull it tight as if you are tying a knot, to achieve clean cuts.
2. Gently flatten each piece with your hand and shape them into spirals, which you place in a baking tray lined with parchment paper.

Step 6: Rising and baking
1. Allow the spirals to rise in a warm place for 20-30 minutes until they increase in volume.
2. Preheat the oven to 180°C. Once the spirals have risen, bake them for 25-30 minutes or until they become golden and fluffy.
