Poppy seed crescents are a traditional delicacy, tender and fragrant, that bring a festive touch to every home. Filled with a fine poppy seed cream, these pastries are perfect for enjoying with loved ones. In this recipe, I will guide you step by step to achieve the most delicious poppy seed crescents, perfect for Christmas.

Preparation time: 1 hour
Baking time: 20 minutes
Total time: 1 hour and 20 minutes
Number of servings: 24 crescents

Ingredients:
- 350 g flour
- 250 g lard (or 1 package of butter/margarine)
- ½ cup mineral or regular water
- 1 teaspoon baking soda
- 1 lemon (zest)
- a pinch of salt
- 100 ml milk
- 200 g sugar
- vanilla essence (to taste)
- 200 g poppy seeds

Preparing the poppy seeds (in advance):
1. Start by preparing the poppy seeds a day before. They will need time to soften and develop a rich flavor. Put 200 g of poppy seeds in a bowl and pour a cup of hot water over them. Let them sit overnight. If you don’t have time, make sure to leave them for at least 2 hours.
2. After they have softened, the poppy seeds need to be ground. Use a grinder or blender to obtain a fine paste.

Preparing the poppy seed filling:
3. In a pot, bring 100 ml of milk and 200 g of sugar to a boil. Stir well until the sugar completely dissolves.
4. Add the blanched poppy seeds and stir over low heat until the mixture thickens. Once it reaches the desired consistency, remove from heat and add vanilla essence to taste. Let the filling cool.

Preparing the dough for crescents:
5. In a large bowl, place 250 g of lard and 350 g of flour. Mix well with a spatula or by hand until homogeneous.
6. Grate the lemon zest and add it to the flour mixture. Add the baking soda, a pinch of salt, and the mineral water. Knead the dough well until it becomes elastic and smooth. Cover the bowl with a clean towel and let it rise for 40 minutes.

Forming the crescents:
7. After the dough has risen, divide it into two or three equal parts. Roll out each portion on a floured surface, forming thin sheets.
8. Evenly spread the poppy seed filling on each sheet. Using a knife, cut squares of 6-7 cm. Roll each square from corner to corner to form the crescents.
9. Place the crescents on a baking tray lined with parchment paper, leaving a little space between them.

Baking:
10. Preheat the oven to 180°C (350°F) and bake the crescents for 20 minutes or until they become golden.

Serving:
11. After they have cooled, dust the crescents generously with powdered sugar and place them on a nice platter. These poppy seed crescents are perfect for gifting or enjoying alongside a cup of tea or coffee.

Suggestions and variations:
- You can add ground nuts to the poppy seed filling for extra texture.
- If you prefer a more intense flavor, you can add a few drops of almond essence to the filling.
- Instead of powdered sugar, you can use a simple glaze made of water and powdered sugar for a shiny appearance.

These poppy seed crescents are not only a quick and simple dessert to prepare, but also an excellent way to bring the Christmas atmosphere into your home. Enjoy!
