Classic risotto is an emblematic recipe of Italian cuisine, being not just a dish, but a culinary experience that perfectly blends flavors and textures. We start by choosing a quality rice, such as Arborio or Carnaroli, which have a high starch content, essential for achieving the characteristic creaminess of risotto.

The first step in preparing this risotto is to place a pan over medium heat and add a little olive oil, enough to evenly cover the bottom of the pan. Although not mandatory, adding finely chopped onion to the heated oil will enhance the flavor of our dish. The onion is sautéed for a few minutes until it becomes translucent, being careful not to burn it, so as not to alter the final taste.

Once the onion has softened, we add the rice and stir well, ensuring that each grain of rice is coated with oil. This process helps to release the starch from the rice, which will contribute to the creamy texture of the risotto. After about a minute, when the rice becomes slightly translucent, we begin to gradually pour in the vegetable broth simmering on another burner. It is important to add the broth one ladle at a time, stirring constantly, until the rice absorbs the liquid. This process takes about 18-20 minutes, and the secret to a perfect risotto lies in patience and attention.

When the rice is al dente and the risotto has reached the desired consistency, turn off the heat and add Gorgonzola. It will melt easily into the dish, providing an intense flavor and unmistakable creaminess. Stir well to allow the cheese to integrate evenly.

To present the risotto artistically, slices of pear can be added as a garnish. If you want to impress, you can lightly caramelize the pear slices by adding a sprinkle of sugar in a pan. This will add a touch of sweetness and a pleasant contrast to the saltiness of the Gorgonzola. You can also add small cubes of pear cooked with the rice, which will contribute to a balanced flavor and interesting texture.

Serve the risotto hot, garnished with the caramelized pear slices and, if desired, with a few fresh parsley leaves for an extra splash of color. This recipe is not just a meal, but a celebration of flavors and textures, perfect for enjoying with loved ones.

 Ingredients: I prepared for 2 servings: 160g of rice, 2 tablespoons of oil, broth as needed (about 1 liter and a bit), 1/2 pear since it was huge... I put it in boiling broth and took it out when it softened a bit. Then I sliced it and sautéed it in a non-stick pan with 1 teaspoon of oil... Gorgonzola about 2 fingers wide, cut into cubes (to prevent sticking to the knife, the blade is passed through grated cheese: parmesan, grana, pecorino, etc...)
