Inspired by Laura Adamache and with a nod from my friends, Ancuta, Timea, Buni, and Gaby, this recipe is perfect for impressing family and friends. Let's get started!
Preparation time: 20 minutes
Rising time: 40 minutes
Baking time: 20-25 minutes
Total time: 1 hour and 25 minutes
Number of servings: 12 mini-breads
Ingredients:
- 500 g flour
- 270 ml lukewarm water
- 1 cube of fresh yeast (25 g)
- 4 tablespoons oil
- 1/2 teaspoon salt
- 2 l water (for boiling)
- 12 teaspoons baking soda
- 4 tablespoons water (to activate the baking soda)
Useful tips for ingredients:
1. Flour: Choose a high-quality bread flour for optimal texture.
2. Yeast: Use fresh yeast, as it will give the breads a more intense flavor. If using dry yeast, adjust the amount to about 8 g.
3. Water: The water should be lukewarm, not hot, to activate the yeast without killing it.
4. Baking soda: This is the secret to the crispy crust. Make sure to mix it well with the water before use.
History of the recipe:
Laugens Brot has its origins in baking tradition, initially prepared by bakers seeking an innovative method to enhance the texture and flavor of bread. This recipe has evolved over time, becoming a favorite in many households. Today, we can enjoy them as a perfect snack or as part of a meal.
Preparation:
1. Preparing the dough: In a large bowl, add the flour and make a well in the center. In this well, add the fresh yeast mixed with sugar and a little lukewarm water. Let it sit for 5 minutes to activate the yeast.
2. Adding the ingredients: Once the yeast starts to foam, add the salt, oil, and gradually the rest of the lukewarm water. Start kneading with your hands until you obtain an elastic and non-sticky dough. If the dough is too sticky, add a little more flour.
3. Rising: Cover the bowl with a clean towel and let it rise in a warm place for 40 minutes, until the dough volume doubles.
4. Shaping the breads: Once the dough has risen, oil your hands and shape 12 equal-sized dough balls. Place them on a baking tray lined with parchment paper.
5. Boiling the breads: In a large pot, bring 2 liters of water to a boil, adding salt and baking soda. When the water starts to boil, add 6 mini-breads at a time and let them boil for about 30 seconds. This is the key step to achieving that crispy crust.
6. Baking: Remove the breads with a spatula and place them on the lined tray. Using a sharp knife, make a few small cuts on top. Preheat the oven to 200°C and bake the breads for 20-25 minutes or until golden brown.
7. Cooling: After removing them from the oven, place the breads on a cooling rack and cover them with a clean towel to cool. This step will help maintain the soft texture of the crumb.
Serving and suggestions:
Laugens Brot is excellent warm, served with butter or cheese. You can accompany them with a warm soup or use them as a base for sandwiches. If you want to add a touch of flavor, sprinkle some sea salt or poppy or sesame seeds on top before baking.
Nutritional benefits:
These mini-breads are rich in carbohydrates, providing quick energy, but they are also a good source of protein due to the flour. Adding seeds can increase the fiber and nutrient content.
Frequently asked questions:
1. Can I use whole wheat flour?
Yes, but you will need to adjust the amount of water, as whole wheat flour absorbs more water.
2. How do I keep the breads fresh?
Store them in an airtight container at room temperature. They can also be frozen for longer storage.
3. Can I add herbs or spices?
Absolutely! Herbs like oregano or rosemary can add a delicious flavor.
Laugens Brot is a true delight for the senses and is easy to prepare, even for those with little kitchen experience. So don’t hesitate, gather the ingredients and enjoy this simple and delicious recipe! Enjoy your meal!
