Tiramisu
To prepare a delicious tiramisu, we will start by making the base cream, which gives the dessert that creamy texture and unmistakable taste. In a heat-resistant bowl, we mix the egg yolks with the sugar. This mixture will be cooked over a steam bath, so we will place the bowl over a pot of gently boiling water. Using a whisk, we will constantly mix the egg yolks and sugar until they become a smooth cream and change color, turning into a light yellow. The process may take about 10-15 minutes.
Once we have achieved a fine and airy texture, we will remove the bowl from the steam. Now it’s time to add the mascarpone. It is important to do this step gently, so we will use a wooden spoon and incorporate the mascarpone slowly, avoiding losing the air in the mixture. The mixture should become creamy and uniform, without lumps.
After obtaining a homogeneous composition, it is time to integrate the whipped cream. We take the whipped cream and add it to the mascarpone cream, mixing carefully. This step will give the dessert a fluffy consistency and a refined taste.
Next, we prepare to assemble the tiramisu. In a dish, we put a first layer of cream, making sure to spread it evenly. We then prepare the coffee, to which we have added a splash of liqueur for extra flavor. We dip each ladyfinger in the coffee, but no more than two seconds, to avoid soaking them too much. We place a layer of ladyfingers over the cream in the dish, followed by another layer of cream, repeating the process until the end, ensuring that the last layer is also cream.
To finish, we generously sprinkle cocoa powder on the surface of the tiramisu, which will add a contrast of flavor and an elegant appearance. Now, our dessert needs to sit in the refrigerator for at least three hours to set and allow the flavors to fully develop. Once the time has passed, the tiramisu is ready to be served.
