To prepare a delicious semolina pudding with cheese, it is important to follow the steps carefully and enjoy each stage of the process. We start by soaking the raisins in rum to give them a sweet and pleasant flavor. We let the raisins soak in rum for about 15-20 minutes, during which time the flavor will be absorbed.

In the meantime, we prepare a pot in which we boil the milk. We add a pinch of salt and two tablespoons of sugar, stirring to ensure that the sugar dissolves completely. When the milk reaches boiling point, we start adding the semolina in a rain-like manner, being careful to stir continuously. This is essential to avoid lumps forming. We boil the mixture on low heat, stirring constantly, until the composition thickens and becomes creamy. Once we achieve the desired consistency, we pour the mixture into a buttered and breadcrumb-lined heat-resistant mold, creating a delicious first layer.

Next, we take care of the cheese filling. In a large bowl, we crumble the cottage cheese well, adding sugar, vanilla sugar, egg yolks, and grated lemon zest. We mix everything until we obtain a homogeneous composition. Finally, we add the flour and the drained raisins from the rum, gently mixing to distribute them evenly in the composition.

An essential step to achieve a fluffy structure is whipping the egg whites. Using a mixer, we beat the egg whites until they become a stiff and glossy foam. Then, we incorporate these egg whites into the cheese mixture using a spatula to maintain the aeration of the composition.

After we finish preparing the cheese mixture, we carefully pour it over the cooled semolina layer. We level the surface with a spatula, ensuring it is even. Now, we preheat the oven to a moderate temperature and place the mold in the oven for about 30 minutes. It is important to check the pudding from time to time, as we want to achieve a nicely browned crust.

Once the time has expired and the pudding has taken on a golden color, we take it out of the oven and let it cool. Once it has completely cooled, we cut the pudding into portions and serve it dusted with powdered sugar. This semolina pudding with cheese is perfect to be enjoyed alongside a cup of tea or coffee, being a dessert that combines tradition with a modern touch.
