If you are looking for a quick and delicious dessert, sweet cheese and raisin pie is the perfect choice. This easy-to-make recipe combines the creamy texture of cheese with the sweetness of raisins, resulting in a final product that will delight any sweet lover. Here’s how to prepare it step by step.

Preparation time: 30 minutes
Baking time: 30 minutes
Total time: 1 hour
Number of servings: 12

### Ingredients

For the dough (2 sheets):
- 7 tablespoons of milk
- 7 tablespoons of oil
- 6 tablespoons of sugar
- 1 egg
- 1 teaspoon of baking soda or 1 packet of baking ammonia
- 1 teaspoon of vinegar
- 400 g of sifted flour (twice)

For the cheese filling:
- 500 g of cottage cheese
- 1 cup of sugar
- Raisins soaked in rum and drained (about 100 g)
- 2 packets of vanilla sugar
- 2 eggs
- 2 tablespoons of flour
- 2 tablespoons of semolina (to sprinkle over the filling)

### Preparation

1. Making the dough: In a large bowl, combine the milk, oil, and sugar. Mix the ingredients until the sugar dissolves completely. Add the egg and mix again. In another container, combine the baking soda (or ammonia) with the vinegar and let it react. Add this mixture to the bowl with the wet ingredients.

2. Adding the flour: Gradually incorporate the sifted flour into the wet mixture, stirring continuously to avoid lumps. Knead the dough until it becomes soft and elastic. Let it rest for about 15 minutes, covered with a clean towel.

3. Preparing the filling: In a separate bowl, place the cottage cheese, sugar, drained raisins, and vanilla sugar. Mix well to obtain a homogeneous composition. Add the eggs, flour, and semolina, continuing to mix until all ingredients are well incorporated.

4. Assembling the pie: Divide the dough into two equal balls. On a floured work surface, roll out the first ball into a thin sheet. Place the sheet in the greased and floured baking pan or lined with parchment paper. Pour the cheese filling over the sheet and spread it evenly. Roll out the second ball of dough and place it over the filling. Use a fork to pierce the surface so that steam can escape during baking.

5. Baking: Preheat the oven to 165°C and bake the pie for about 30 minutes or until it turns golden.

6. Cooling and serving: After the pie is baked, let it cool completely in the pan. Cut it into squares and dust with powdered vanilla sugar for an elegant look and sweet taste.

### Useful tips

- Raisins: If you want to enhance the flavor of the raisins, soak them in rum or warm water with a little sugar for half an hour.
- Variations: You can add lemon or orange zest to the filling for a refreshing citrus taste. Also, replacing some of the cheese with ricotta can give a different and pleasant texture.
- Serving: This pie pairs perfectly with a scoop of Greek yogurt or vanilla ice cream, providing a nice contrast between warm and cold.

Enjoy this sweet cheese and raisin pie with your loved ones, whether as a dessert for a festive meal or as a delicious snack over the weekend!
