- 2-3 tablespoons of cocoa
- 100 g of raisins
- 100 g of Turkish delight (cut into cubes)
Preparing the cozonac:
1. Preparing the raisins: Start by placing the raisins in a bowl of warm water and let them soak for about 30 minutes. This step will not only improve the texture of the raisins but also allow them to absorb more flavors. After soaking, drain them well in a colander.
2. Preparing the milk: In a bowl, pour the warm milk and add the sugar, stirring until it completely dissolves. It is important that the milk is warm, not hot, to avoid killing the yeast.
3. Creating the starter: In a small bowl, combine a handful of flour with the packet of dry yeast and a few tablespoons of the sweet milk. Mix well until you obtain a smooth paste. Sprinkle a little flour on top and let the starter rise in a warm place (between pillows, as you suggest) for 15 minutes. This step is essential for achieving a fluffy cozonac.
4. Mixing the egg yolks: In another bowl, mix the egg yolks with the salt and lemon zest. The fresh aroma of lemon will add extra flavor to your cozonac.
5. Forming the dough: In a large bowl, sift the flour and add the risen starter, mixing well. Then add the egg yolks and sweet milk, continuing to mix until you obtain a smooth dough. Now, start kneading the dough, gradually adding the melted butter. Kneading is key for a fluffy cozonac, so take your time! Continue kneading for about 30-35 minutes. 7. Filling and rolling: Spread a small amount of melted butter on the rolled-out dough, then sprinkle cocoa mixed with 1-2 tablespoons of sugar. Don’t forget the raisins and the diced Turkish delight! Carefully roll the dough, making sure to keep the filling inside.
8. Preparing for baking: Place the cozonac in a greased and floured baking pan. Brush the surface with an egg yolk or melted butter and, if desired, sprinkle brown sugar or sesame seeds for a crunchy appearance. Preheat the oven to medium heat.
9. Baking: Bake the cozonac for about 30 minutes. IMPORTANT: Do not open the oven door in the first 20 minutes! When the cozonac is nicely browned, take it out of the oven and cover it with a towel to keep its moisture. Wait for it to cool almost completely before removing it from the pan to prevent it from breaking.
