To prepare a delicious pie, start by kneading a dough from simple ingredients: flour, salt, water, and a tablespoon of vinegar. This vinegar will help achieve a more tender texture. Mix the ingredients until you obtain a homogeneous dough. If you find the dough too dry, add a little water, and if it is too sticky, sprinkle a little flour. Once you have achieved the desired consistency, let the dough rest at room temperature for about 30 minutes. This resting period will help the gluten relax, making it easier to roll out the sheets.
In the meantime, prepare the filling. In a bowl, mix the cottage cheese with the crumbled telemea and sour cream. Use a spatula or a fork to combine the ingredients until you achieve a creamy, homogeneous, and slightly salty composition. This will add a rich flavor to your pie. Depending on personal preferences, you can also add herbs or spices, such as dill or pepper, to enhance the filling's aroma.
After the dough has rested, divide it into six equal pieces and start rolling each piece into thin sheets, the size of the tray you will be using. Make sure the sheets are thin enough but not so much that they break. Grease a heat-resistant tray with butter, ensuring it is well covered. Place the first two sheets of dough, overlapping and greased with melted butter or oil, to add moisture and flavor. After laying the first sheets, evenly distribute half of the cheese filling, leveling it with a spatula.
Continuing, add another two sheets of dough, each greased with butter, then the rest of the filling, ensuring it is evenly distributed. Cover the pie with the last two greased sheets, forming a crispy crust in the end. In a separate bowl, beat the eggs with yogurt or sour cream, mixing well to obtain a homogeneous composition. Pour this mixture over the pie, ensuring it is well incorporated into the filling.
Preheat the oven to medium temperature and bake the pie for about 30 minutes. Patience is key, as the pie will be ready when it is well-baked and golden brown on top, with a golden crust. After removing it from the oven, let it cool slightly before cutting and serving. This cheese pie is perfect as an appetizer, snack, or even as a main dish, alongside a fresh salad.
