Combined cake with walnut and coconut

The history of this cake is one of harmony and creativity, born from the need to satisfy the different tastes of loved ones. In my case, my twins were the perfect inspiration. So I decided to combine two favorites into one: a delicious cake with fillings of walnut and coconut that intertwine perfectly in a symphony of flavors. With a soft base and a fine cream, this cake will quickly become a family favorite.

Ingredients:

For the base:
- 150 g chocolate (choose a good quality chocolate for an intense flavor)
- 200 g butter (at room temperature for easy incorporation)
- 200 ml milk
- 1 tablespoon sugar (you can use brown sugar for a more caramelized taste)
- 2 egg yolks
- 300 g flour (whole grain for more fiber)
- 1 teaspoon baking soda
- 1 packet baking powder
- a pinch of salt
- rum essence (a drop adds a pleasant aromatic note)

For the coconut filling:
- 4 egg whites
- 4 tablespoons sugar
- 150 g coconut
- a pinch of salt
- 1/2 packet baking powder

For the walnut filling:
- 4 egg whites
- 4 tablespoons sugar
- 150 g ground walnuts
- a pinch of salt
- 1/2 packet baking powder

For the cream:
- 6 egg yolks
- 4 tablespoons sugar
- 750 ml milk
- 6 tablespoons flour
- 200 g butter (make sure it is soft for easy incorporation)
- 3 packets vanilla sugar
- a pinch of salt
- chocolate flakes for decoration

Preparation method:

1. Preparing the base: Start by melting the butter, chocolate, milk, sugar, and a pinch of salt in a pot over low heat. Stir constantly until you achieve a homogeneous mixture. Once all the ingredients are melted, allow the mixture to cool slightly.

2. Combining the ingredients: After the mixture has cooled, add the two egg yolks. Mix well, then add the flour, baking soda, baking powder, and rum essence. Use a mixer to obtain a uniform mixture. Let the dough rest for 10-15 minutes.

3. Preparing the fillings: Separate the egg whites into two bowls. In each bowl, beat the egg whites with a pinch of salt, then gradually add the sugar, continuing to mix. In one bowl, add the coconut mixed with the baking powder, and in the other, the ground walnuts. Mix each composition well.

4. Assembling the cake: Line a 20x30 cm tray with baking paper. Pour 2/3 of the base mixture into the tray. Make one side with the coconut filling and the other with the walnut filling. Pour the remaining base mixture on top and level it with a spatula or spoon.

5. Baking: Preheat the oven to 180 degrees Celsius and bake the cake for 40 minutes. Check with a toothpick if it is baked - it should come out clean.

6. Preparing the cream: In another bowl, mix the egg yolks with the sugar, a pinch of salt, and flour. Add a little cold milk and mix until homogeneous. Then, pour the rest of the warm milk and put the pot on the heat, stirring continuously until the cream thickens. Once it has reached the desired consistency, let it cool.

7. Finalizing the cream: Cream the butter with the vanilla sugar and incorporate it into the cooled cream, adding a little at a time. Use the mixer to obtain a fine cream.

8. Final assembly: Once the cake has cooled, spread the cream evenly on top and decorate with chocolate flakes.

- If you want an even more intense flavor, you can add a little vanilla essence to the buttercream.
- You can experiment with different types of nuts or topping ingredients to customize the cake.
- Make sure all ingredients are at room temperature to achieve a uniform and soft cake.
