Grilled stuffed trout

 Ingredients: We need the following: First of all, trout - 4 large peeled red ones - 3 Bulgarian hot peppers - juice from 2 lemons - salt, white pepper, Delikat - about 200 ml of oil - slices of bacon - one clove of garlic for each trout - bell pepper - sprigs of fresh rosemary.

To prepare a delicious stuffed trout recipe, we will start by making a flavorful marinade that will add a special taste to the fish. We begin by peeling the tomatoes, preferably using a quick method: we dip them for a few seconds in boiling water, then immediately transfer them to cold water. This process will allow us to easily remove the skin. After the tomatoes are peeled, we cut them into small cubes so that their flavor perfectly integrates into the mixture.

Next, we turn our attention to the hot peppers, which we slice thinly. They will add a touch of spiciness and flavor to our dish. In a generous bowl, we combine the diced tomatoes with the slices of hot pepper and add 200 ml of good quality olive oil. It is important to use olive oil, as it will provide a refined taste and help the flavors penetrate.

We then add a large spoonful of salt and a spoonful of Delikat to enhance the flavor. In the same mixture, we cut a bell pepper into small cubes and squeeze the juice from two lemons, which will bring a note of acidity and freshness. We do not forget to add a pinch of white pepper, which will perfectly complement the flavors. We mix all the ingredients well, ensuring that the salt and Delikat dissolve evenly.

After obtaining a homogeneous marinade, we place the trout in this mixture and let them marinate in the cold for about two hours. This marinating time is essential, as it allows the fish to absorb the intense flavors of the ingredients. After the two hours have passed, we take out the trout and start filling them with the prepared mixture. Each fish will receive a slice of bacon, a slice of bell pepper, and a clove of garlic, and for an extra touch of flavor, we add a sprig of rosemary.

After the trout are stuffed, we place them on aluminum foil brushed with a splash of oil. We carefully wrap each fish, ensuring it is well covered to retain juiciness during cooking. We place the foil on the grill, directly on the coals, and let it roast for about 15 minutes on one side, then turn it over and let it brown on the other side to achieve a delicious crust. This cooking technique will give the trout a perfect texture and an irresistible taste, enriched by the flavors of the ingredients used. Finally, we serve the trout with a side of fresh vegetables or a green salad to complete a delicious and healthy dish.
