Caramel Cream
To prepare a delicious homemade caramel, the first step is to choose the right sugar. It is recommended to use white granulated sugar, as it melts evenly and will provide us with a beautiful color and refined taste. We put the sugar in a thick-bottomed pot, which distributes heat evenly, and place it over low heat. It is essential not to stir the sugar during the melting process, as this can lead to the formation of crystals. Instead, we can gently shake the pot from time to time to help homogenize the melted sugar.
After a few minutes, we will notice how the sugar begins to melt and takes on a brownish color, transitioning from transparent to a shiny golden hue. When we reach the desired shade, we take the pot off the heat, being careful not to leave it too long, as the caramel can burn quickly. Now, it is time to mix well using a wooden spatula or whisk to achieve a smooth consistency.
Once the sugar has homogenized, we transfer the caramel to another pot, preferably one made of glass or ceramic, and add the butter cut into flakes. We mix vigorously so that the butter melts quickly and integrates into the caramel. After the butter has completely incorporated, we add the heavy cream. It is important to use cream with a high-fat content to achieve a creamy and rich texture. We place the pot back on the heat and continue to stir, allowing the caramel to simmer gently for a few minutes.
As we cook, the caramel will become increasingly creamy and denser. It is essential to ensure that we stir constantly to prevent sticking or burning. When the caramel reaches the desired texture, we carefully pour it into a clean jar, allowing it to cool completely. This caramel can be stored in the refrigerator for a longer period, but before using it, it is good to take it out of the fridge a few minutes beforehand to reach room temperature.
