Chicken Breast Rolls, Breaded
Chicken fillets are an excellent choice for a delicious and savory meal, but today we will transform them into a special dish with a rich and flavorful filling. We start by placing the chicken fillets in a sturdy bag and, using a meat mallet, we will gently pound them, being careful not to tear them. This step helps to even out the meat so that it cooks evenly and becomes tender. Once we are done pounding, we season the fillets with salt, pepper, and, if desired, other preferred spices, then we refrigerate them to cool and firm up a bit.
Meanwhile, we prepare the filling. We finely chop the onion and slice the mushrooms thinly. In a pan, we melt a piece of butter and, once it is hot, we add the chopped onion. We let it sauté, stirring occasionally, until it becomes translucent and soft. Then, we add the mushrooms and, continuing to stir, we let them sauté until they lose their moisture and become slightly browned. Finally, we season the mixture with salt, pepper, and a splash of freshly chopped parsley to give it a fresh and aromatic taste. Once the filling has cooled, we are ready to assemble our delicious rolls.
Now we prepare three bowls: one with beaten eggs, one with flour, and one with breadcrumbs mixed with grated cheese and coarsely crushed cornflakes. This mixture will provide a crunchy and savory crust for the rolls. We take each slice of chicken breast and, on one edge, place a slice of cheese, 1-2 teaspoons of the mushroom mixture, and a few slices of red bell pepper for a pop of color and flavor. Then, we tightly roll each slice of meat, being careful not to let the filling spill out, and secure the roll with a toothpick.
Now we dip each roll in flour, then in egg, and to give it an even crunchier texture, we repeat the process twice: egg, breadcrumbs, egg, breadcrumbs. In a deep pan, we heat the oil and, when it is well heated, we add the rolls. We fry them on all sides, being careful not to burn them, until the meat is tender and golden. Once they are done, we remove them and place them on paper towels to absorb excess oil.
These stuffed chicken rolls are perfect for a family dinner or a special occasion. Served alongside a fresh salad or with grilled vegetable sides, they will surely impress everyone around. Enjoy your meal!
