Chimichurri – An explosion of flavors

Chimichurri is a vibrant and aromatic sauce, originating from the culinary traditions of cultures rich in gastronomic history. This sauce proves to be a perfect accompaniment for grilling, but also for vegetables, fish, or even eggs. Here’s how you can prepare an authentic chimichurri that will add a splash of color and flavor to every meal.

Preparation time: 15 minutes
Rest time: 1 hour
Total time: 1 hour 15 minutes
Number of servings: 8 servings

Ingredients

- 2 pieces of chili peppers (preferably red or green, depending on your preference)
- 4 cloves of garlic
- 1 medium onion or 2 smaller ones (choose red onion for a sweeter taste and a livelier color)
- 2 tablespoons of freshly chopped parsley
- 2 teaspoons of salt
- 1 teaspoon of dried oregano
- 1 teaspoon of fresh thyme leaves (optional)
- 1 bay leaf (or two if fresh)
- 50 ml of vinegar (preferably red wine vinegar)
- 50 ml of water
- 100 ml of extra virgin olive oil
- 1 teaspoon of freshly ground black pepper

Preparing the chimichurri

Step 1: Preparing the ingredients
Start by washing all fresh ingredients thoroughly. The chili peppers should be finely chopped, but don't worry, you can adjust them according to your desired spiciness. The garlic will be minced finely, while the onion will be cut into slightly larger pieces, providing a pleasant texture to the sauce.

Step 2: Mixing the ingredients
In a large bowl, add the chopped chili peppers, garlic, onion, parsley, salt, oregano, thyme, and pepper. Mix these ingredients well to ensure that the flavors combine perfectly.

Step 3: Preparing the liquid
In a small pot, bring the vinegar and water to a boil. This step is essential as it will help extract the flavors from the chopped herbs. Once the mixture starts to boil, pour it over the ingredients in the bowl and mix again.

Step 4: Resting the sauce
Cover the bowl with a lid or plastic wrap and let the sauce rest for 30 minutes. This stage allows the flavors to develop and meld together. If you have patience and let it sit for even 1-2 days in the refrigerator, you will notice an explosion of tastes and a fantastic color.

Step 5: Adding the oil
After the sauce has rested, pour the extra virgin olive oil into the mixture and mix well. The oil will add a note of richness and will bind all the flavors together.

Useful tips

1. Sauce texture: If you want a finer texture, you can use a food processor to chop the ingredients. However, a more rustic texture will add a touch of originality.
2. Enhancements: You can also add other herbs like cilantro or basil to customize the recipe to your taste.
3. Storage: Chimichurri can be stored in the refrigerator for up to 14 days. Make sure it is in an airtight container to maintain freshness.

Combining with other recipes

This sauce pairs perfectly with:

- Beef or pork steaks
- Grilled chicken
- Roasted or grilled vegetables
- Baked fish
- Boiled or fried eggs

Nutritional benefits

Chimichurri is rich in antioxidants due to the fresh herbs and garlic, which have anti-inflammatory properties. Extra virgin olive oil provides healthy fats for the heart. This sauce contains no added sugar and is an excellent choice for a balanced diet.

Frequently asked questions

1. Can I use a different vinegar?

Absolutely! All ingredients are plant-based, making this sauce suitable for vegans.

3. How can I adjust the spiciness level?
If you prefer a milder sauce, you can reduce the amount of chili peppers or use sweet peppers.

4. Can I freeze it?
While it’s best enjoyed fresh, you can freeze it in small portions, but the flavor may not be as intense.
