Pasta with asparagus

 Ingredients: for 2 servings: * 180 g pasta * about 10-12 asparagus spears * 50 g cream cheese type Philadelphia, plain or with herbs * 2 tablespoons olive oil * ½ onion * grated parmesan, grana (parmesan) * salt, pepper

To prepare this delicious asparagus and cheese pasta recipe, we start by cleaning the asparagus. We remove the woody ends and then wash it well under a stream of cold water. We bring a pot of water and a teaspoon of salt to a boil, and when the water starts to boil, we add the asparagus. We boil it for about 3-4 minutes until it becomes tender but retains a crunchy texture. After boiling, we remove the asparagus from the water and let it cool a bit, then cut it into pieces about 3-4 cm long.

In a large skillet, we heat the olive oil over medium heat. We add the finely chopped onion and let it sauté for 5-7 minutes, stirring occasionally, until it becomes golden and soft. The aroma of the sautéed onion will add a delicious flavor to our dish. As soon as the onion is ready, we add the chopped asparagus and mix well, allowing everything to combine for a few minutes.

To intensify the flavors, we add cheese, which can be feta, parmesan, or any other preferred cheese, cut into cubes or grated, depending on preferences. We mix all the ingredients, and then pour in a little of the water in which the pasta was boiled, preferably the water in which we previously boiled the asparagus, to add extra flavor. We let the mixture boil for about 5 minutes, so the cheese melts and blends with the other ingredients.

Meanwhile, we cook the pasta according to the package instructions until al dente. Once the pasta is ready, we drain it and add it to the skillet, mixing everything well for a minute, so the pasta absorbs the flavors from the asparagus and cheese sauce. It is important to serve this dish immediately, and for an extra touch of flavor and appearance, we can sprinkle grated parmesan and a little freshly ground pepper on top. This dish is not only tasty but also full of nutrients, thanks to the asparagus, an excellent ingredient for a balanced diet. Enjoy it warm, alongside a fresh green salad to complete the meal!
