To prepare a special delicacy, start by placing fresh yeast, sugar, and lukewarm water in a cup. Mix the ingredients well and let the mixture sit for 15 minutes until a foam forms on the surface, indicating that the yeast is active. In another container, add salt to the water and stir carefully to dissolve completely. Then, pour this salty water over the sifted flour, mixing with a fork to incorporate the dry ingredients. Start forming a dough, and when it begins to come together, transfer it to a lightly floured work surface.

Knead the dough for about 10 minutes until it becomes non-sticky, firm, and elastic, a true pleasure for your hands. In a clean bowl, place a tablespoon of olive oil and coat the dough on all sides to prevent it from drying out. Cover the bowl with a clean towel and let it sit in a warm place where the temperature is constant for one hour or until the dough doubles in volume. After this period, gently press the dough to release the trapped air and let it sit for another 10 minutes.

The next step involves dividing the dough into 8 equal pieces. Shape each piece into balls, being careful not to handle them too much so as not to ruin their texture. Using a floured finger, make a hole in the center of each ball, about 2 cm in diameter. Gently flatten each piece to obtain an even disc. Place them on a tray lined with aluminum foil, cover them again, and let them rise for 10-15 minutes.

Meanwhile, bring a pot of water to a gentle boil and preheat the oven to 220 degrees Celsius (or gas mark 7). When the water is boiling, place 2-3 pieces of dough into the pot and boil them for one minute on each side. Use a slotted spoon to carefully remove them, letting them drain excess water, then transfer them back to the prepared tray. With a brush, coat the tops with beaten egg, and then sprinkle with sesame or poppy seeds, as desired.

Bake these delicious treats for 18-20 minutes or until they are golden and fluffy. Let them cool for at least room temperature before serving to fully appreciate their flavor and texture. This recipe is perfect as an appetizer or snack, bringing a touch of tradition and flavor in every bite. Enjoy them alongside a fresh salad or filled with various delicious ingredients!
