Filling: In a large bowl, mix all the filling ingredients until you obtain a homogeneous composition. Make sure each ingredient is well incorporated so that the flavors combine perfectly. Once finished, let the mixture sit at room temperature to allow the ingredients to reveal their full flavor.
Dough: Start with the yeast, mixing it with the sugar in a small bowl. Pour warm milk over this mixture, being careful that the milk is not too hot so as not to kill the yeast. After the yeast has dissolved, add the melted and cooled butter, which should be just warm to the touch. This step is crucial as it will contribute to the final texture of the dough.
In another bowl, sift the flour to aerate it and remove any lumps. Once the flour is prepared, pour the liquid yeast mixture over the sifted flour. Mix with a spatula or by hand until the ingredients combine. Towards the end, add the salt, which will enhance the flavor of the dough. Knead the dough until you achieve a homogeneous, smooth, and elastic texture that no longer sticks to the bowl or your hands.
After you finish kneading, shape the dough into a ball and place it in a bowl greased with a little oil. Cover it with a towel or plastic wrap and let it rise in a warm place until it doubles in volume. If you prefer to use a bread machine, add the salt and flour to the machine's bowl, then pour in the liquid yeast mixture. Select the dedicated dough program and let the machine do its work.
When the dough has risen, remove it to a lightly oiled work surface. Roll it out into a rectangular sheet about 0.5-0.7 cm thick. Spread the filling evenly over the dough, ensuring it is distributed homogeneously. Roll the dough from the short side to form a tight roll. After 5 minutes of resting, roll the dough out again into a rectangular sheet, having dimensions similar to the previous one.
Now, roll the sheet of dough from the long side, being careful to stretch it as much as possible so that the roll has a diameter of no more than 6-7 cm. Using kitchen scissors, make cuts 1 cm apart from the edge, being careful not to completely detach the dough. Repeat the process to make another identical cut. With the third incision, completely detach a piece from the roll to obtain three equal parts.
Fold the ends of the dough cylinder outward, forming a basket shape with a handle. Repeat this procedure with the remaining dough, then transfer the obtained baskets to a baking tray lined with parchment paper. Let them rise again in a warm place, sheltered from drafts, until they double in volume.
Before baking, brush the surface with egg yolk and, if desired, sprinkle grated cheese on both sides of the handle. Preheat the oven to 180 degrees and bake the baskets for about 25 minutes, or until golden and well browned. Once ready, remove them to a rack and let them cool.
