Preparation time: 30 minutes
Cooking time: 1 hour
Servings: 6-8

Ingredients:
- 3-4 new potatoes
- 5-6 sweet potatoes
- 2 ears of corn
- 1 green chayote
- 1 light green chayote
- 1-2 yuca roots
- 1 tiquisque root
- 500-600 g of beef (cubed)
- 1-2 onions
- 1 green banana
- 2-3 stalks of celery
- 1 head of garlic
- 1 red bell pepper
- 2 bay leaves
- Salt and pepper to taste
- Cooking oil

Preparation:

1. Preparing the Ingredients: Start by washing and peeling the vegetables. This is an essential step, as proper cleaning will influence the taste and texture of the dish. Cut the new potatoes, sweet potatoes, yuca, and tiquisque into appropriately sized pieces, being careful not to cut them too small to avoid them breaking down during cooking. Leave them larger if they are small.

2. Corn: Remove the husks and silk from the corn and cut it into smaller pieces. The corn will add a sweet flavor and a crunchy texture.

3. Chayote and Other Vegetables: Peel the green and light chayote, cutting them into evenly sized pieces. Also, slice the green banana, dice the onion, cut the celery into rounds, and finely crush the garlic. Cut the bell pepper into cubes.

4. The Meat: Cut the beef into suitable cubes. This will be the juicy base of your dish.

5. Cooking the Meat: In a pressure cooker, add the oil and let it heat up. Add the onion and celery, cooking them until soft and fragrant (about 5-7 minutes). Add the beef and cook for 30 minutes. This step will help enhance the flavors.

6. Adding the Vegetables: Once the meat is well cooked, add all the previously prepared vegetables, including corn, chayote, green banana, yuca, and tiquisque. Cover with water and let it boil for 1 hour. Occasionally check if the vegetables are cooked, stirring gently.

7. Seasoning: After the vegetables are cooked, add salt, pepper, and bay leaves. Let it boil uncovered for 5-7 minutes to blend the flavors.

8. Serving: Olla de Carne is ready! Remove the vegetables and meat from the pot and place them on plates. This traditional dish can be served alongside plain or flavored rice, or even with a fresh salad.

Serving Suggestions: You can add a few drops of lime squeezed on top for an extra touch of freshness.

Variations: Olla de Carne can easily be adapted to your preferences. Instead of beef, you can use chicken or even a vegetarian version, using additional vegetables such as carrots or pumpkin.

Nutritional Benefits: This dish is rich in proteins, vitamins, and minerals, thanks to the variety of vegetables used. Additionally, sweet potatoes are an excellent source of antioxidants and fiber.
