Preparation time: 3 hours
Baking time: 35 minutes
Number of servings: 15

Ingredients

For the base
- 5 eggs + 1 egg white
- A pinch of salt
- 4 tablespoons of sugar
- 2 tablespoons of flour
- 7 tablespoons of ground walnuts
- 1 packet of baking powder

For the syrup
- 500 ml water
- 3 tablespoons of sugar
- Rum essence (to taste)

For the buttercream
- 200 g butter (at room temperature)
- 3 tablespoons of sugar
- 1 tablespoon of unsweetened cocoa
- 1 packet of Bourbon vanilla sugar
- 1 teaspoon of ground coffee

For the white chocolate cream
- 300 ml liquid cream
- 150 g white chocolate

For decoration
- Hazelnuts
- Crushed pistachios
- Grapes (preferably white)
- Colored sugar (blue)

Preparation

Step 1: Preparing the base
1. Start by preheating the oven to 180°C. Prepare a round baking pan (about 24 cm) with parchment paper so the base doesn't stick.
2. In a large bowl, beat the egg whites with a pinch of salt until foamy. Gradually add the sugar and continue mixing until you achieve a firm meringue.
3. Gently fold in the egg yolks, baking powder, flour, and ground walnuts using a spatula to retain the air in the meringue.
4. Pour the mixture into the prepared pan and bake for about 35 minutes on low heat. Check with a toothpick to see if it's done — it should come out clean.
5. Once baked, let the base cool completely on a wire rack.

Step 2: Preparing the syrup
1. In a small pot, combine the water and sugar. Place over medium heat and let it boil for 5 minutes, stirring occasionally.
2. Remove from heat and add the rum essence to taste. Allow to cool.

Step 3: Buttercream
1. In a bowl, mix the butter with the sugar until creamy.
2. Add the cocoa, vanilla sugar, and ground coffee, continuing to mix until well combined. This cream will give the cake a rich and aromatic note.

Step 4: Glazed hazelnuts
1. Toast the hazelnuts in a dry pan with a little salt until golden.
2. Once cooled, carefully peel them.
3. Melt the white chocolate in a double boiler, then let it cool slightly. Dip the hazelnuts in chocolate, then let them dry on a sheet of aluminum foil. Sprinkle colored sugar on top for a festive look.

Step 5: White chocolate cream
1. Whip the liquid cream in a bowl until soft. Add the melted white chocolate and gently mix with a spatula to avoid hardening.

Step 6: Assembling the cake
1. Cut the cooled base into three equal layers.
2. Begin assembling: place the first layer on a platter and soak it with the prepared syrup.
3. Spread a layer of buttercream, then place the second layer. Add a third of the white chocolate cream, on top of which place the peeled and seeded grapes.
4. Add the last layer of base, then cover the cake with the remaining white chocolate cream.
5. Decorate with the glazed hazelnuts, grapes, and crushed pistachios. Sprinkle colored sugar for an extra touch of color.

Step 7: Cooling and serving
1. Refrigerate the cake for a few hours, ideally overnight, to allow the flavors to meld.
2. Serve with confidence and enjoy the reactions of your loved ones!

Helpful tips
- Ingredients: Make sure the butter is at room temperature for easy mixing. Use high-quality chocolate for a more intense flavor.
- Vegan option: You can replace the butter with vegan margarine and the eggs with a mixture of flaxseed and water to create a delicious vegan cake.
- Serving: This cake pairs wonderfully with a scoop of vanilla ice cream or warm chocolate sauce.

Nutritional benefits
This cake, while delicious, is high in calories, with approximately 350 calories per serving due to the sugar and butter. The nuts and hazelnuts provide a good source of protein and healthy fats, while the white chocolate will give you an instant energy boost.

Frequently asked questions
- Can I use another type of nut? Absolutely! Almonds or pecans are excellent alternatives.
- How can I store the cake? You can keep it in the refrigerator wrapped in cling film, but it is recommended to consume it within 3-4 days to maintain its freshness.
