Liver rolls
Chicken liver is a versatile and delicious ingredient, ideal for a variety of dishes. We start by washing the chicken liver under a stream of cold water, ensuring that we remove any impurities. Once cleaned, we place it on paper towels, allowing it to dry well. This step is essential for achieving an even and crispy fry.
Once the liver is dry, we take each piece individually and cut it in half lengthwise. This method not only helps speed up the cooking process but also allows for better marination of the liver, so the flavors penetrate deeper. After cutting the liver, we prepare to season it. We sprinkle salt and freshly ground pepper over each piece, but we can also add other spices to taste, such as sweet paprika or herbs.
We roll the liver pieces in flour, ensuring that each piece is well coated. This will create a delicious crust when the liver is fried. In a deep skillet, we heat a little olive oil along with butter for added flavor. When the oil is hot, we carefully add the liver rolls, being careful not to overcrowd the pan to allow for even frying.
We let the liver fry for about 3-4 minutes on each side, or until it becomes golden and crispy. It is important not to overcook it, as chicken liver can become dry and lose its tender texture. Once the liver is cooked, we remove it from the pan and place it on a platter covered with a paper towel to absorb excess oil.
For added flavor, we can prepare a simple garnish of sautéed onion and apple, which will pair perfectly with the rich taste of the liver. We cut the onion into julienne strips and the apple into small cubes, then sauté them together in the same pan, adding a little sugar to caramelize. This mixture will provide a sweet and tangy contrast that will perfectly complement the liver.
Finally, we serve the chicken liver alongside the onion and apple garnish, decorating with a few fresh parsley or coriander leaves for an attractive appearance. This simple and quick recipe is sure to become a favorite among loved ones, offering an unforgettable culinary experience!
