Dietetic Meatball Soup

 Ingredients: * 2 carrots * 1 medium celery * 4 potatoes * 1 onion * 3/4 cup tomato juice * 1 cup borscht * parsley Meatballs: * 400 grams beef * cooked soy granules (depends on how much you are willing to add, I used about a cup) * 1 egg * 3 tablespoons rice * 3 tablespoons breadcrumbs * fresh dill * thyme * salt, pepper, and paprika

To prepare a delicious meatball soup, the first step is to clean the vegetables. Choose carrots, celery, peppers, and onion, each ingredient playing its role in enhancing the flavor. Cut them into small cubes so they cook evenly. Then place them in a large pot with water and bring to a boil. It is important to use enough water to cover all the vegetables and allow for proper boiling.

In the meantime, let’s focus on the meatballs. Choose ground pork or chicken, depending on your preferences. If you want a healthier option, you can use turkey meat. Boil the soy in boiling water for a few minutes, then drain it well. In a large bowl, add the ground meat, boiled soy, an egg, a finely chopped onion, a handful of washed rice, and your favorite spices such as salt, pepper, and chopped parsley. Mix the ingredients well until you obtain a homogeneous mixture, then form small balls, making sure they are of equal size to cook evenly.

Once the vegetables have started to boil and are almost cooked, reduce the heat to low and carefully add the formed meatballs. At first, they will sink in the water, but don’t worry, as they cook, they will rise to the surface. Let the meatballs boil for 20 minutes, the necessary time for them to cook completely. During this time, the flavor of the vegetables will blend perfectly with that of the meat.

After 20 minutes, add the tomato juice to the soup to give it a touch of acidity and a pleasant color. Stir gently and continue to boil for a few more minutes. Season the soup with salt, pepper, and thyme, adjusting the taste according to your preferences. Meanwhile, in another pot, bring the borscht to a boil. When the borscht starts to boil, pour it into the soup, making sure to check how sour it is, so it doesn’t affect the final taste of the dish.

After adding the borscht, let the soup boil for another 10 minutes, allowing the flavors to combine harmoniously. When the time is up, take the pot off the heat and let it rest for a few minutes. The meatball soup is now ready to be served! You can add some fresh parsley leaves at the end for an extra touch of freshness.
