- 15 mussels (well washed)
- 12 medium shrimp (peeled, leaving the head and tail)

- 75 ml olive oil
- 75 ml dry white wine
- 340 g rice (preferably paella rice, but you can also use long-grain rice)
- 4 sun-dried tomatoes (sliced)

- ¼ teaspoon hot paprika
- Salt and pepper to taste

Preparing the seafood paella:

1. Preparing the ingredients: Start by washing the mussels very well in several waters, making sure to remove any trace of sand. Peel the shrimp, but leave the head and tail for a more authentic look. If using clams or crab, ensure they are fresh.

2. Boiling the seafood: In a pot, add the dry white wine and about 115 ml of water. Bring the mixture to a boil, then add the mussels and boil for 10 minutes. Next, add the shrimp and continue boiling for another 10 minutes, until all seafood is cooked. If using clams or crab, add them at the end and let them boil briefly until the mussels open.

3. Straining the liquid: Using a slotted spoon, remove all the seafood from the pot and set aside. Strain the liquid in which the seafood was boiled, measure it, and top up with water until you reach 720 ml.

4. Cooking the rice: In a wok or a heavy-bottomed pot, heat the olive oil. Add the onion and garlic, sautéing until translucent. Then, add the rice and mix well to coat it with oil. Add the sun-dried tomatoes, the previously obtained liquid, saffron, parsley, paprika, salt, and pepper. Cover the pot and let it simmer over medium heat. Stir occasionally to avoid sticking.

5. Finishing the dish: When the rice is almost cooked but still slightly firm, add the seafood to the pot. Gently mix to incorporate it into the rice. Let it rest for a few minutes before serving.

Serving suggestions: Paella is best served hot, straight from the pan. You can add lemon slices for an extra touch of freshness and flavor. A simple green salad or a tomato and onion salad can perfectly complement the meal. Also, a dry white wine or sangria are excellent accompaniments to this dish.
